La confiseuse du Val-de-Ruz (NE) est la premi\u00e8re femme \u00e0 acc\u00e9der \u00e0 la t\u00eate d\u2019une association romande de la branche. Femme ou homme, cela n\u2019a pas vraiment d\u2019importance pour la nouvelle dirigeante. L\u2019essentiel est de tous tirer \u00e0 la m\u00eame corde. Rencontre\u2026\u2002<\/strong><\/p>\n\n\n\n<p>\u00ab\u2009Cuistot\u2009\u00bb\u2009! Tel est le choix professionnel au sortir de l\u2019\u00e9cole obligatoire de Nathalie Suter, fille unique d\u2019une maman secr\u00e9taire et d\u2019un papa b\u00fbcheron. L\u2019Office cantonal de l\u2019orientation scolaire et professionnelle lui conseille toutefois d\u2019effectuer auparavant un stage dans une autre corporation\u2009; ce qu\u2019elle entreprend \u00e0 la boulangerie Knecht \u00e0 Neuch\u00e2tel. Dans le commerce de la Place du March\u00e9, elle d\u00e9couvre un XXX th\u00e9\u00e2tre tout en chocolat. C\u2019est le coup de foudre\u2009: \u00ab\u2009J\u2019ai trouv\u00e9 cela tellement g\u00e9nial que j\u2019ai voulu en faire mon m\u00e9tier.\u2009\u00bb En 1989, elle d\u00e9bute un apprentissage de p\u00e2tissi\u00e8re-confiseuse-glaci\u00e8re chez Estoppey \u00e0 Peseux (NE). Son certificat obtenu, la jeune professionnelle s\u2019occupe des p\u00e2tisseries, des sauces et des l\u00e9gumes dans les cuisines de l\u2019Aubier \u00e0 Montezillon (NE), six mois durant. \u00ab\u2009L\u2019odeur du chocolat me manquait trop. (\u2026) Presque quotidiennement apr\u00e8s le service, j\u2019ingurgitais une plaque de chocolat, alors que je n\u2019en mangeais pas avant. Cela s\u2019est termin\u00e9 par une indigestion\u2009!\u2009\u00bb<\/p>\n\n\n\n<p>D\u00e9sireuse de voir du pays, la native du Val-de-Ruz r\u00eave de partir au Canada. Faute d\u2019avoir entrepris les d\u00e9marches n\u00e9cessaires, elle se contente de la Suisse allemande\u2009: trois ans et demi \u00e0 la B\u00e4ckerei Galli \u00e0 Steffisburg (BE) et sept chez F. Steiner \u00e0 Bolligen (BE). En 2004, ses parents acqui\u00e8rent un b\u00e2timent \u00e0 Boudevilliers (NE) et lui proposent de cr\u00e9er une boulangerie-confiserie. De retour, leur fille fonde La Gourmandise. Elle engage une aide et une vendeuse.<\/p>\n\n\n\n<p>Ouverte sept sur sept, son affaire s\u2019est depuis agrandie. Gr\u00e2ce \u00e0 l\u2019achat d\u2019une maison adjacente, un laboratoire p\u00e2tisserie a vu le jour. L\u2019entreprise emploie d\u00e9sormais dix-neuf collaborateurs, dont trois apprentis en production. Si au d\u00e9but le hasard a voulu que l\u2019\u00e9quipe soit exclusivement f\u00e9minine, il en est autrement aujourd\u2019hui. \u00ab\u2009Nous nous entendions tr\u00e8s bien, mais au bout d\u2019un moment, il fallait quand m\u00eame un je-ne-sais-quoi de masculin\u2009\u00bb, sourit la patronne. Pour ne pas concurrencer le restaurant et le bar situ\u00e9s \u00e0 proximit\u00e9, elle a fait l\u2019impasse sur un tea-room\u2009: \u00ab\u2009Nous pr\u00e9parons quelques caf\u00e9s \u00e0 l\u2019emporter\u2009; cela suffit.\u2009\u00bb<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-du-japonais-au-malabar\"><strong>Du japonais au malabar<\/strong><\/h2>\n\n\n\n<p>Les mati\u00e8res premi\u00e8res sont autant que possibles r\u00e9gionales et artisanales. Aux c\u00f4t\u00e9s du trio immuable carac, tarte au citron, japonais et autres classiques v\u00e9n\u00e9r\u00e9s, des cr\u00e9ations originales garnissent les \u00e9tals et les pani\u00e8res. Parmi elles, figure le pain malabar, le dernier vendredi du mois. A base d\u2019oignon, de fromage et de lard, la sp\u00e9cialit\u00e9 n\u2019a rien \u00e0 voir avec un c\u00e9l\u00e8bre chewing-gum. Son nom, elle le doit au gentil\u00e9 des habitants de Boudevilliers\u2009: les Malabars. Que ce soit en boulangerie ou en confiserie, la cr\u00e9ativit\u00e9 de la fondatrice trouve sa place \u00e0 la Gourmandise. \u00ab\u2009Parfois, cela va tr\u00e8s loin. D\u2019une simple discussion autour d\u2019une graine, peut germer l\u2019id\u00e9e d\u2019un pain, puis d\u2019un sandwich.\u2009\u00bb<\/p>\n\n\n\n<p>A l\u2019\u00e9coute de sa client\u00e8le et de son personnel, Nathalie Suter l\u2019est aussi de ses confr\u00e8res et plus g\u00e9n\u00e9ralement de la branche. C\u2019est d\u2019ailleurs la raison qui l\u2019a pouss\u00e9e \u00e0 rejoindre le comit\u00e9 de l\u2019Association des artisans boulangers-confiseurs neuch\u00e2telois, en 2016. \u00ab\u2009Je ne voulais pas que le si\u00e8ge de Th\u00e9r\u00e8se Maeder, responsable de la communication, reste vacant.
