La r\u00e9ouverture a eu lieu le 1<sup>er<\/sup>\u00a0septembre 2022. La propri\u00e9taire Franziska Brunner est tr\u00e8s satisfaite du r\u00e9sultat.<\/strong><\/p>\n\n\n\n<p>\u00ab\u2009Il \u00e9tait important pour nous d\u2019augmenter le chiffre d\u2019affaires du pain et des produits de boulangerie, d\u2019am\u00e9liorer la perception de notre comp\u00e9tence boulang\u00e8re, et d\u2019\u00e9largir et de rajeunir notre client\u00e8le gr\u00e2ce \u00e0 un concept de caf\u00e9 moderne\u2009\u00bb, explique Franziska Brunner en r\u00e9sumant les objectifs de la transformation, qui devait \u00eatre r\u00e9alis\u00e9e sur une surface disponible de 200 m2. L\u2019ancien concept pr\u00e9sentait par ailleurs l\u2019inconv\u00e9nient suivant\u2009: l\u2019espace vente de la boulangerie et le caf\u00e9 \u00e9taient s\u00e9par\u00e9s dans l\u2019espace. La longue distance entre les deux contraignait le personnel de vente \u00e0 ne travailler que d\u2019un c\u00f4t\u00e9, et l\u2019\u00e9quipe de service \u00e0 se cantonner au caf\u00e9, ce qui n\u00e9cessitait davantage de personnel.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Le nouveau concept de service fonctionne<\/h2>\n\n\n\n<p>\u00ab\u2009Aujourd\u2019hui, les clients commandent directement au comptoir, paient \u00e0 la caisse centrale et emportent leur commande \u00e0 leur table\u2009\u00bb, explique Franziska Brunner. Apr\u00e8s une courte p\u00e9riode de familiarisation avec le nouveau concept de service, la client\u00e8le s\u2019en est tr\u00e8s bien accommod\u00e9e. Le nouveau concept a aussi repr\u00e9sent\u00e9 un grand changement pour les collaborateurs, et notamment pour l\u2019\u00e9quipe de service, qui doit d\u00e9sormais aussi travailler \u00e0 la vente, selon Franziska Brunner. \u00ab\u2009Nous avons inform\u00e9 le personnel en temps utile, et tous les membres de l\u2019\u00e9quipe ont heureusement jou\u00e9 le jeu en s\u2019engageant pleinement, malgr\u00e9 les inqui\u00e9tudes initiales. Les processus sont maintenant bien rod\u00e9s.\u2009\u00bb Le fait que tous les collaborateurs puissent d\u00e9sormais \u00eatre affect\u00e9s \u00e0 l\u2019ensemble de la filiale facilite en outre la planification des ressources.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-plus-de-confort-au-cafe\">Plus de confort au caf\u00e9<\/h2>\n\n\n\n<p>Le repositionnement du comptoir de vente et du caf\u00e9 a permis d\u2019optimiser un autre point n\u00e9gatif de l\u2019ancien concept, \u00e0 savoir le fait que le caf\u00e9 pr\u00e9sentait des courants d\u2019air d\u00e9sagr\u00e9ables pour la client\u00e8le. \u00ab\u2009En pla\u00e7ant le comptoir de vente tout \u00e0 l\u2019avant du centre commercial, nous avons gagn\u00e9 en visibilit\u00e9 et, en plus, il est d\u00e9sormais plus agr\u00e9able de s\u2019asseoir au calme dans le caf\u00e9\u2009\u00bb, rel\u00e8ve Franziska Brunner.
