Ces galettes de ma\u00efs sont la quintessence de la nourriture traditionnelle colombienne.<\/p>\n\n\n\n<p>Chaque r\u00e9gion de Colombie a sa propre version de ce plat populaire, qui peut \u00eatre moelleux, aplati, fourr\u00e9 ou non, sucr\u00e9 ou sal\u00e9, servi au petit-d\u00e9jeuner avec des anchois ou comme repas principal avec du poulet. Dans notre qu\u00eate des meilleures arepas de la ville, tous les autochtones nous ont conseill\u00e9 les \u00ab arepas de Yiya ! \u00bb<\/p>\n\n\n\n<p>Yolanda, la fille de la c\u00e9l\u00e8bre Dilia Martinez, connue sous le nom de Yiya, m\u2019a chaleureusement accueillie. Elle m\u2019a invit\u00e9e \u00e0 manger des arepas et a accept\u00e9 de me d\u00e9voiler ses recettes, ses techniques et l\u2019histoire de sa m\u00e8re : toute jeune, Yiya (1923 &#8211; 2018) a quitt\u00e9 la campagne pour la ville et lanc\u00e9, en pionni\u00e8re, une association de productrices d\u2019arepas. En 1943, alors \u00e2g\u00e9e de 20 ans, elle a ouvert son propre \u00e9tablisse-ment, qu\u2019elle a g\u00e9r\u00e9 avec l\u2019aide d\u2019autres femmes \u2013 et le succ\u00e8s a rapidement \u00e9t\u00e9 au rendez-vous. Son secret ? \u00ab La honestidad \u00bb, l\u2019honn\u00eatet\u00e9, que l\u2019on retrouve dans le choix des ingr\u00e9dients, dans la pr\u00e9paration des plats, dans les relations interpersonnelles et avec la client\u00e8le.<\/p>\n\n\n\n<p>Le lendemain, j\u2019ai \u00e9t\u00e9 invit\u00e9e \u00e0 petit-d\u00e9jeuner avec Yolanda et sa ni\u00e8ce Camila, qui m\u2019ont pr\u00e9par\u00e9 un bollo de queso, un autre plat local \u00e0 base de ma\u00efs, qu\u2019elles ont servi avec de l\u2019eau de ma\u00efs. Les bonnes arepas exigent de l\u2019honn\u00eatet\u00e9 ; mais les Colombiennes et les Colombiens savent aussi ce qu\u2019est l\u2019hospitalit\u00e9.
