C\u2019est ainsi que de c\u00e9l\u00e8bres gourmandises telles que la tarte aux noix des Grisons, mais aussi des cr\u00e9ations du cru, dont les \u00abMungg\u00e4 Knusperli\u00bb ou les \u00abSteinbock H\u00f6rnli\u00bb, se retrouvent en plaine.<\/strong><\/p>\n\n\n\n<p>\u00abIci, nous vivons principalement du commerce saisonnier et du tourisme\u00bb, explique \u00e0 \u00abPanissimo\u00bb le propri\u00e9taire des lieux Didier Grond, dans le cadre du caf\u00e9 <a href=\"https:\/\/www.grond-engadin.ch\/\" target=\"_blank\" rel=\"noreferrer noopener\">Grond<\/a> \u00e0 Sils Maria\u00a0(GR). \u00abDe d\u00e9but novembre jusqu\u2019autour du 26\u00a0d\u00e9cembre, c&#8217;est plut\u00f4t calme chez nous, puis s\u2019ensuivent deux semaines de forte fr\u00e9quentation. Nous avons environ huit mois d\u2019activit\u00e9 intense, et devons donc r\u00e9aliser tout notre chiffre d&#8217;affaires durant ce laps de temps.\u00bb Pour le site de Sils Maria, cela signifie notamment que la localit\u00e9 qui compte 400\u00a0r\u00e9sidents et r\u00e9sidentes permanents en basse saison voit sa population passer \u00e0\u00a03000\u00a0habitants et habitantes en p\u00e9riode de pointe. En jetant un coup d\u2019\u0153il \u00e0 la ronde dans le charmant caf\u00e9, on s\u2019aper\u00e7oit qu\u2019on se trouve plut\u00f4t dans une phase calme \u2013 quelques locaux savourent un caf\u00e9 ou un th\u00e9, tandis que des touristes se r\u00e9chauffent et s\u2019approvisionnent en d\u00e9lices d&#8217;Engadine pour le voyage de retour. \u00abLes touristes doivent pouvoir ramener des souvenirs ou des cadeaux diff\u00e9rents de ce qui se trouve chez eux\u00bb, estime Didier Grond.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-des-creations-a-foison\"><strong>Des cr\u00e9ations \u00e0 foison<\/strong><\/h2>\n\n\n\n<p>En entrant dans une filiale Grond, on trouve certes des sp\u00e9cialit\u00e9s grisonnes classiques telles que la l\u00e9gendaire tarte aux noix des Grisons ou le pain aux poires dans diff\u00e9rentes variantes. La tourte d\u2019Engadine est \u00e9galement tr\u00e8s appr\u00e9ci\u00e9e. Elle contient une cr\u00e8me vanille au beurre, de fines couches de p\u00e2te bris\u00e9e, un couvercle florentin et un peu de kirsch. Mais Didier Grond et ses 45 employ\u00e9s et employ\u00e9es ont surtout \u00e0 c\u0153ur de miser sur des produits maison originaux: diff\u00e9rentes sortes de tablettes de chocolat se disputent les faveurs de la client\u00e8le \u2013 qu&#8217;elles soient affin\u00e9es au romarin ou agr\u00e9ment\u00e9es de caramel, les sp\u00e9cialit\u00e9s chocolati\u00e8res de la maison joliment emball\u00e9es ont fi\u00e8re allure. Les \u00abMungg\u00e4 Knusperli\u00bb \u2013 une cr\u00e9ation \u00e0 base de riz souffl\u00e9 et de chocolat au lait \u2013 mettent \u00e9galement l\u2019eau \u00e0 la bouche. Le chef pour sa part appr\u00e9cie les \u00abSteinbock H\u00f6rnli\u00bb (cornes de bouquetin), disponibles en plusieurs vari\u00e9t\u00e9s, qui \u00e9voquent le l\u00e9gendaire animal h\u00e9raldique du canton des Grisons. \u00abJe suis un fan absolu de la variante qui contient des noix de macadamia, du chocolat au lait, du gianduja et du caramel\u00bb, confie Didier Grond, avant d\u2019ajouter en souriant \u00abEn fait, je ne peux pas r\u00e9sister \u00e0 quoi que ce soit de sucr\u00e9 dans notre production\u2026\u00bb. La famille Grond a toujours cultiv\u00e9 le terroir. Elle est particuli\u00e8rement fi\u00e8re de la farine de bl\u00e9 des Grisons, qui est cultiv\u00e9e et transform\u00e9e dans la r\u00e9gion.
