Aujourd\u2019hui, nombreux sont celles et ceux qui acceptent la facturation de la charge en r\u00e9sultant pour les collaboratrices et collaborateurs. La soci\u00e9t\u00e9 l\u2019a finalement accept\u00e9e.<\/p>\n\n\n\n<p>Pourquoi le pain n\u2019est-il pas factur\u00e9 ? C\u2018est la question que s\u2019est pos\u00e9e un restaurant bernois avant de mettre son pain \u00e0 la carte en tant qu\u2019\u00e9l\u00e9ment de l\u2019entr\u00e9e. Un quotidien a exprim\u00e9 son avis sur le sujet dans sa critique gastronomique : six francs pour quelques tranches de pain, c\u2019est \u00ab un peu cher \u00bb. Il a par contre omis de mentionner qu\u2019il s\u2019agissait d\u2019un pain au levain fait maison et servi avec du beurre aromatique fabriqu\u00e9 sp\u00e9cialement pour l\u2019occasion.<\/p>\n\n\n\n<p>Je trouve juste de demander quelque chose pour du pain de qualit\u00e9 sup\u00e9rieure, et ce pour plusieurs raisons. Cela conf\u00e8re au pain une reconnaissance m\u00e9rit\u00e9e. Beaucoup de gens ne se rendent pas compte du travail que requiert la confection d\u2019un pain. C\u2019est depuis que je fais moi-m\u00eame du pain au levain \u00e0 la maison que je sais que la fabrication n\u00e9cessite beaucoup d\u2019expertise, de flair et de temps. Le fait de commander sciemment du pain pour accompagner un plat permet d\u2019\u00e9viter de le consommer machinalement, sans r\u00e9fl\u00e9chir, d\u00e8s qu\u2019il arrive sur la table. Et n\u2019a-t-on pas l\u2019impression que ce qui est gratuit ne vaut rien ? Pourquoi donc le pain est-il la seule chose qu\u2019on pose simplement sur la table ?<\/p>\n\n\n\n<p>Il est temps de faire \u00e9voluer les mentalit\u00e9s de la client\u00e8le. Encouragez vos clients \u00e0 appr\u00e9cier davantage votre pain dans leurs restaurants. Au d\u00e9but, l\u2019une, l\u2019un ou l\u2019autre \u00ab r\u00e2lera \u00bb en voyant le pain figurer sur l\u2018addition. Avec le temps, cela deviendra naturel ; comme pour l\u2019eau du robinet.
