La taxation nationale des produits de boulangerie-confiserie adopte d\u00e9sormais d\u2019un rythme triennal. Entretien avec Nicolas Taillens, directeur du SBT, au sujet de l\u2019avenir de la manifestation, \u00e0 l\u2019occasion de la rencontre avec les sponsors en d\u00e9cembre.<\/strong><\/p>\n\n\n\n<figure class=\"wp-block-image size-full is-resized\"><img decoding=\"async\" src=\"https:\/\/swissbaker.ch\/wp-content\/uploads\/2023\/01\/nicolas-taillens-sbt.jpg\" alt=\"\" class=\"wp-image-55085\" width=\"299\" height=\"380\"\/><figcaption><em>Nicolas Taillens<\/em><\/figcaption><\/figure>\n\n\n\n<p><strong>Nicolas Taillens, la derni\u00e8re \u00e9dition du SBT a eu lieu en 2021. Pourqoui avoir d\u00e9cid\u00e9 d&#8217;organiser la prochaine en 204 et non en 2023 ?<\/strong><br>Il y a plusieurs raisons \u00e0 cela. Tout d\u2019abord, l\u2019\u00e9cart de trois ans, forc\u00e9 par le Covid, a d\u00e9montr\u00e9 que cette plus longue attente permettait d\u2019apporter de nouvelles id\u00e9es dans l\u2019organisation, de donner de l\u2019air non seulement aux sponsors, mais \u00e9galement aux participants. Ces derniers ont plus de temps pour proposer de nouveaux produits.<br>Ensuite, le Concours suisse des produits du terroir a lieu \u00e0 Courtemelon (JU) en 2023. C\u2019\u00e9tait une volont\u00e9 de ne pas organiser le SBT la m\u00eame ann\u00e9e, notamment pour les coll\u00e8gues qui participent aux deux concours.<br>Finalement, il s\u2019agira de la 10e \u00e9dition en 2024, que nous voulons festive et dynamique. Cette ann\u00e9e suppl\u00e9mentaire de pr\u00e9paration permettra au comit\u00e9 d\u2019organisation d\u2019apporter et de mettre sur pied des id\u00e9es sp\u00e9ciales pour ce jubil\u00e9.<\/p>\n\n\n\n<p><strong>Deux ans d&#8217;absence, les principaux sponsors vous ont-ils d\u00e9j\u00e0 annonc\u00e9 leur pr\u00e9sence ?<\/strong><br>La rencontre du 2 d\u00e9cembre avait justement pour but de travailler sur le financement de la prochaine \u00e9dition. C\u2019est donc encore trop t\u00f4t pour se prononcer concernant le sponsoring pour 2024. Nous sommes d\u2019ailleurs dans une phase de r\u00e9flexion, pour faire \u00e9voluer les prestations selon les nouveaux canaux de communication et les nouvelles attentes des sponsors.<\/p>\n\n\n\n<p><strong>Ce rythme de trois ans est-il d\u00e9finitif ? Comment maintenir l&#8217;int\u00e9r\u00eat des sponsors et celui des artisans entre deux \u00e9ditions ?<\/strong><br>A priori, oui, m\u00eame si nous sommes toujours ouverts aux retours et aux exp\u00e9riences. Comme dit pr\u00e9c\u00e9demment, cela permet justement aux sponsors de lisser leurs budgets, ou pourquoi pas d\u2019augmenter de cat\u00e9gorie de sponsoring, et aux artisans de se renouveler dans les produits d\u00e9pos\u00e9s. Ces derniers pourront \u00e9galement profiter plus longtemps des prix et m\u00e9dailles obtenus \u00e0 chaque \u00e9dition.<\/p>\n\n\n\n<p><strong>Quelles seront les particularit\u00e9s et les nouveaut\u00e9s de la 10e \u00e9dition?<\/strong><\/p>\n\n\n\n<p>Cette \u00e9dition se voudra festive, dynamique et offrira une place de choix \u00e0 la jeunesse. Il y aura notamment un Prix du jubil\u00e9, cr\u00e9\u00e9 uniquement pour la 10<sup>e<\/sup> \u00e9dition. Il sera attribu\u00e9 \u00e0 un produit ayant remport\u00e9 une m\u00e9daille lors d\u2019une des neuf \u00e9ditions pr\u00e9c\u00e9dentes et remis le dernier jour de la manifestation. Les artisans auront la possibilit\u00e9 d\u2019inscrire 11 produits au maximum (10 nouveaux et 1 ancien produit m\u00e9daill\u00e9).<br>La Swiss Bakery Trophy Academy sera une autre nouveaut\u00e9 propos\u00e9e. Cette cat\u00e9gorie sp\u00e9ciale, d\u00e9di\u00e9e aux \u00e9coles professionnelles du pays, vise \u00e0 mettre en valeur la rel\u00e8ve. Elle offrira aux classes d\u2019apprentis de 2e ann\u00e9e la possibilit\u00e9 de pr\u00e9senter un entremet qui \u00a0sera tax\u00e9 selon les m\u00eames crit\u00e8res que les \u00ab\u00a0grands\u00a0\u00bb. Nous souhaitons ainsi faire d\u00e9couvrir \u00e0 notre rel\u00e8ve la vie associative par des \u00e9v\u00e9nements comme le Swiss Bakery Trophy et les sensibiliser aux d\u00e9fis de l\u2019innovation et de la cr\u00e9ation.\u00a0 Le choix de l\u2019entremet s\u2019est fait par coh\u00e9rence avec les plans de formation et devrait permettre ainsi aux ma\u00eetres de cours de m\u00ealer la th\u00e9orie et la pratique. Les classes viendront sur place livrer leur produit et auront aussi la possibilit\u00e9 de d\u00e9couvrir le Salon suisse des go\u00fbts et terroirs. La distribution des prix se fera le jour-m\u00eame.<br>D\u2019autres nouveaut\u00e9s sont pr\u00e9vues au sein des animations, dont une s\u00e9lection de recettes p\u00e2tissi\u00e8res de consommateurs, r\u00e9alis\u00e9es et pr\u00e9sent\u00e9es en public sous la houlette d\u2019un professionnel.
