La derni\u00e8re grande r\u00e9novation date de 2015. Le magasin et la partie avant du tea-room avaient alors \u00e9t\u00e9 transform\u00e9s. En 2017, les fr\u00e8res Samuel et Thomas reprennent l\u2019exploitation de leurs parents Christian et Maja Lanz. A ce moment-l\u00e0, les deux jeunes entrepreneurs savaient d\u00e9j\u00e0 qu\u2019ils souhaitaient r\u00e9nover la deuxi\u00e8me partie du caf\u00e9 ainsi que les terrasses. \u00ab\u2009Nous avons \u00e9conomis\u00e9 pendant trois ans\u2009\u00bb, raconte Samuel Lanz. Le d\u00e9but des travaux de r\u00e9novation \u00e9tait pr\u00e9vu pour 2020. Mais le projet a \u00e9t\u00e9 retard\u00e9 par le Covid\u2009: \u00ab\u2009Nous n\u2019avons pas re\u00e7u d\u2019aide de l\u2019\u00c9tat et avons d\u00fb utiliser une partie de nos \u00e9conomies pour payer les salaires\u2009\u00bb. <\/p>\n\n\n\n<p>Le fait qu\u2019ils aient r\u00e9ussi \u00e0 surmonter la crise par leurs propres moyens et sans recourir \u00e0 l\u2019argent des contribuables remplit de fiert\u00e9 l\u2019homme d\u2019affaires de G\u00e4u. La situation a \u00e9t\u00e9 rendue encore plus difficile par le fait que les fr\u00e8res avaient repris au 1er\u202fjanvier 2020 la maison de tradition Kaffeehalle \u00e0 Soleure, qui employait 40 personnes, mais qu\u2019ils ont d\u00fb fermer au bout d\u2019un mois seulement sur d\u00e9cision du Conseil f\u00e9d\u00e9ral.<\/p>\n\n\n\n<p>Mais Samuel Lanz n\u2019aime plus revenir sur cette p\u00e9riode qui fut si difficile pour les jeunes entrepreneurs. \u00ab\u2009Nous sommes maintenant tr\u00e8s confiants\u2009!\u2009\u00bb Il est extr\u00eamement satisfait du d\u00e9marrage\u2009: en plus de la fid\u00e8le client\u00e8le, ils en ont gagn\u00e9 une nouvelle\u2009: les jeunes clients, surtout des jeunes femmes &#8211; gr\u00e2ce au lounge bar.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-le-principe-du-cameleon\">Le principe du cam\u00e9l\u00e9on<\/h2>\n\n\n\n<p>Samuel Lanz parle du concept de cam\u00e9l\u00e9on\u2009: \u00ab\u2009Nous nous adaptons \u00e0 chaque fois au besoin du client\u2009\u00bb. Le matin, un caf\u00e9 parfum\u00e9, des croissants et le go\u00fbter de la boulangerie. Au d\u00e9jeuner, une offre de restauration, avec des produits de la boulangerie. L\u2019apr\u00e8s-midi, la p\u00e2tisserie, et le soir, un bon d\u00eener avec un verre de vin ou une pause au bar de la piscine &#8230;.<\/p>\n\n\n\n<p><a
