Doch der in Wauwil (LU) ans\u00e4ssige Berufsmann war schon vorher als kreativer, eigensinniger B\u00e4cker bekannt. Seine Freiheit und Eigenst\u00e4ndigkeit gehen ihm \u00fcber alles, ob in der Backstube oder auf seinen Oldtimer-T\u00f6ffs.<\/strong><\/p>\n\n<p>Was fr\u00fcher eher absch\u00e4tzig gemeint war, ist heute sein Markenname und Berufsmotto: der Eigenbr\u00f6tler. Im luzernischen Wauwil ist er B\u00e4cker, wie sein Vater. Und doch hat er fast alles anders angepackt \u2013 zum anf\u00e4nglichen Missfallen der Wauwiler und seiner Familie. Daniel Amrein ging seinen Weg, setzte konsequent auf Bio-Zutaten, bevor diese in Mode kamen, strich viele beliebte Produkte aus dem Sortiment und setzte kompromisslos auf qualitativ hochwertiges Brot.<\/p>\n\n<blockquote class=\"wp-block-quote\"><p>\u00ab\u2009Ich will nicht unbedingt das beste Brot backen, aber ich will es genauso backen, wie es mir vorschwebt.\u2009\u00bb<\/p><cite>Daniel Amrein<\/cite><\/blockquote>\n\n<p>Sein Sonderweg wurde kritisch beobachtet; zuerst f\u00fchlte er sich von den Dorfbewohnern, seinem Vater und manchen Berufskollegen unverstanden. Der Anfang war harzig, aber heute zehrt der Eigenbr\u00f6tler von seiner eigenwilligen Brot-Philosophie \u2013 und hat sich auf dem Wochenmarkt in Luzern sowie \u00fcber die Region hinaus eine treue Fangemeinde erarbeitet.
