Les exemples les plus connus relay\u00e9s par les m\u00e9dias sont les lasagnes \u00e0 la viande de cheval et l\u2019huile d\u2019olive extra vierge, mais le ph\u00e9nom\u00e8ne peut \u00e9galement concerner une fausse d\u00e9claration de l\u2019origine, le non-respect de normes \u2013 bio notamment \u2013 ou l\u2019utilisation d\u2019ingr\u00e9dients de moindre qualit\u00e9 \u00e0 des fins d\u2019enrichissement \u00e9conomique. Finalement, tout responsable de la mise en circulation d\u2019une marchandise doit r\u00e9pondre de sa qualit\u00e9 et de sa s\u00e9curit\u00e9 par rapport \u00e0 la client\u00e8le et \u00e0 l\u2019ex\u00e9cution.\u00a0<\/p>\n\n\n\n<p>Le guide des bonnes pratiques exige de faire appel \u00e0 des fournisseurs fiables lors des achats. Il faut n\u00e9anmoins proc\u00e9der \u00e0 un contr\u00f4le de la livraison conforme aux sp\u00e9cifications \u00e0 la r\u00e9ception des marchandises, et pouvoir garantir la tra\u00e7abilit\u00e9. Ces exigences minimales doivent \u00eatre mises en \u0153uvre dans toutes les entreprises. Les gros clients exigent souvent des certifications suppl\u00e9mentaires pour la s\u00e9curit\u00e9 alimentaire, n\u00e9cessitant une gestion des fournisseurs, avec contr\u00f4le en fonction des risques des fournisseurs directs, et des connaissances approfondies de l\u2019ensemble de la cha\u00eene d\u2019approvisionnement.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-l-exemple-des-biscuits-au-miel\"><strong>L\u2019exemple des biscuits au miel<\/strong><\/h3>\n\n\n\n<p>Il faut garder \u00e0 l\u2019esprit que les boulangers, p\u00e2tissiers et confiseurs peuvent \u00eatre \u00e0 la fois victimes et auteurs de fraudes, et donc jouer des r\u00f4les plus ou moins glorieux. Le client est en effet tromp\u00e9 dans ses attentes lorsque des biscuits au miel sont fabriqu\u00e9s avec du miel de p\u00e2tisserie. Il est certes possible d\u2019utiliser du miel de p\u00e2tisserie pour les autres produits de boulangerie, mais pour autant qu\u2019il soit d\u00e9sign\u00e9 comme tel dans la liste des ingr\u00e9dients, et non comme \u00abmiel\u00bb. L\u2019origine du miel doit \u00e9galement \u00eatre d\u00e9clar\u00e9e si plus de 20&nbsp;% de miel sont utilis\u00e9s dans un produit et si la pr\u00e9sentation laisse pr\u00e9sager une origine sp\u00e9ciale des ingr\u00e9dients.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>La prudence est de mise<\/strong><\/h3>\n\n\n\n<p>Des produits dangereux peuvent \u00e9galement se retrouver sur le march\u00e9 en raison des turbulences que traverse actuellement le commerce mondial. Les modifications \u00e0 court terme des cha\u00eenes d\u2018approvisionnement et l\u2019augmentation des prix des mati\u00e8res premi\u00e8res peuvent inciter les fabricants \u00e0 mettre sur le march\u00e9 des marchandises de qualit\u00e9 inf\u00e9rieure ou tronqu\u00e9e.
