Rien d\u2019\u00e9tonnant donc \u00e0 ce que ces gourmandises glac\u00e9es soient d\u00e9sormais propos\u00e9es \u00e0 tous les coins de rue. Peter von Burg fait partie de ceux qui ont vu s\u2019amorcer cette tendance depuis longtemps. Il y a dix ans, il a ouvert sa Gelateria \u00ab\u2009Dolce Amore\u2009\u00bb \u00e0 K\u00fcssnacht (SZ) et depuis, il a augment\u00e9 chaque ann\u00e9e son volume de production. En tant que chef du d\u00e9partement de p\u00e2tisserie-confiserie, il avait alors remani\u00e9 les cours sur les glaces et le chocolat. C\u2019est l\u00e0 qu\u2019il a d\u00e9couvert sa fascination pour le produit surgel\u00e9. En 2012, Peter von Burg a ouvert son propre magasin, <a href=\"https:\/\/dolceamore.ch\/\" target=\"_blank\" rel=\"noreferrer noopener\">la Gelateria avec caf\u00e9 \u00ab\u2009Dolce Amore\u2009\u00bb<\/a>, d\u2019abord \u00e0 Greppen (LU) et depuis 2015 \u00e0 K\u00fcssnacht am Rigi (SZ).<\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-large is-resized\"><img decoding=\"async\" src=\"https:\/\/swissbaker.ch\/wp-content\/uploads\/2022\/06\/12_2_dolce_amore_2-1024x678.jpg\" alt=\"\" class=\"wp-image-40033\" width=\"559\" height=\"370\" srcset=\"https:\/\/swissbaker.ch\/wp-content\/uploads\/2022\/06\/12_2_dolce_amore_2-1024x678.jpg 1024w, https:\/\/swissbaker.ch\/wp-content\/uploads\/2022\/06\/12_2_dolce_amore_2-768x509.jpg 768w, https:\/\/swissbaker.ch\/wp-content\/uploads\/2022\/06\/12_2_dolce_amore_2.jpg 1200w\" sizes=\"(max-width: 559px) 100vw, 559px\" \/><figcaption>Les enfants adorent la glace de Dolce Amore.<\/figcaption><\/figure>\n<\/div>\n\n\n<p><strong>Pas n\u2019importe quelles fraises<\/strong><br>Depuis toujours, le produit est clairement au premier plan. \u00ab\u2009Nous ne travaillons qu\u2019avec des ingr\u00e9dients frais et les produits proviennent tous de la r\u00e9gion\u2009\u00bb, souligne d\u2019embl\u00e9e Peter von Burg. Les exigences pos\u00e9es aux aliments utilis\u00e9s sont \u00e9lev\u00e9es. Un exemple\u2009: parmi toutes les vari\u00e9t\u00e9s de fraises existantes, seules deux entrent en ligne de compte chez Dolce Amore. \u00ab\u2009Avec les autres vari\u00e9t\u00e9s de fraises, nous n\u2019obtenons pas le go\u00fbt souhait\u00e9\u2009\u00bb, explique Tim von Burg, cuisinier de formation. Le travail li\u00e9 \u00e0 l\u2019achat et le co\u00fbt des produits sont certes un peu plus \u00e9lev\u00e9s. Mais \u00ab\u2009Dolce Amore\u2009\u00bb peut ainsi clairement se d\u00e9marquer sur le march\u00e9 gr\u00e2ce \u00e0 la qualit\u00e9. Et que se passe-t-il si les vari\u00e9t\u00e9s souhait\u00e9es ne sont pas disponibles\u2009? \u00ab\u2009Nous attendons alors d\u2019en trouver \u00e0 nouveau et ne produisons pas avant.
