Les places d\u2019honneur sur le podium sont revenues \u00e0 la boulangerie-p\u00e2tisserie-confiserie P. L\u2019homme de caract\u00e8re a compl\u00e8tement transform\u00e9 l\u2019entreprise h\u00e9rit\u00e9e de son p\u00e8re\u2009; aujourd\u2019hui, il n\u2019a pas de magasin, et vend ses pains directement depuis son fournil ou sur le march\u00e9 hebdomadaire de Lucerne. Des clients aiment tellement ses pains artisanaux \u00e0 base d\u2019ingr\u00e9dients biologiques qu\u2019ils les font emballer sous vide pour les vacances. De nombreux h\u00f4tels et restaurants gastronomiques misent sur les talents de boulanger de ce passionn\u00e9 de moto.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Une voie particuli\u00e8re couronn\u00e9e de succ\u00e8s<\/h2>\n\n\n\n<p>Les d\u00e9buts ont \u00e9t\u00e9 plut\u00f4t difficiles, mais Daniel Amrein a r\u00e9ussi \u00e0 percer avec son stand sur le march\u00e9 lucernois. Son courage a finalement \u00e9t\u00e9 r\u00e9compens\u00e9. Le jury l\u2019a aussi reconnu dans son \u00e9valuation. Sa pr\u00e9sidente Nicole Emmenegger, directrice de l\u2019Union suisse de la levure (SHV), a ainsi d\u00e9crit l\u2019entreprise laur\u00e9ate dans son \u00e9loge\u2009: \u00ab\u2009Daniel Amrein vit toujours selon la m\u00eame philosophie\u2009; ne pas devenir plus grand ou diff\u00e9rent, ou plus prosp\u00e8re. Il suit ainsi son propre chemin avec coh\u00e9rence et sans compromis. Et le succ\u00e8s lui donne raison. Le jury croit que cette entreprise \u2013 r\u00e9solument particuli\u00e8re et unique en son genre \u2013 promeut n\u00e9anmoins l\u2019ensemble de la boulangerie-confiserie artisanale, et est donc \u00e0 cet \u00e9gard un phare dans notre secteur.\u2009\u00bb Mme\u202fEmmenegger a chaleureusement f\u00e9licit\u00e9 le laur\u00e9at 2022, Daniel Amrein, au nom de SHV, avant de conclure\u2009: \u00ab\u2009Daniel Amrein est un boulanger qui a du c\u0153ur et de la passion. Il suit ses convictions avec une grande coh\u00e9rence et fait du pain vraiment d\u00e9licieux.\u2009\u00bb<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">La qualit\u00e9 comme d\u00e9nominateur commun<\/h2>\n\n\n\n<p>Le directeur de la BCS et membre du jury Urs Wellauer, qui a pr\u00e9sent\u00e9 les trois finalistes, s\u2019est montr\u00e9 enthousiasm\u00e9 par la qualit\u00e9 des candidats\u2009: \u00ab\u2009Au total, 66 entreprises ont pos\u00e9 leur candidature. Je tiens \u00e0 les remercier pour leur engagement et leurs id\u00e9es.\u2009\u00bb Une riche palette de services et de produits a notamment \u00e9t\u00e9 pr\u00e9sent\u00e9e au jury. Dans son discours, Mathias Roost de Levure Suisse SA, \u00e9galement repr\u00e9sentant de SHV, a parl\u00e9 de la grande importance de la couronne boulang\u00e8re pour le secteur\u2009: \u00ab\u2009Puissions-nous au sein de SHV et de la BCS promouvoir la bonne image du secteur gr\u00e2ce \u00e0 cette derni\u00e8re, d\u00e9velopper la qualit\u00e9 du pain et d\u2019autres produits, continuer \u00e0 inciter les artisans \u00e0 fournir des prestations de haut niveau, bref, faire en sorte que la couronne boulang\u00e8re serve de phare pour le secteur en 2022 \u00e9galement.\u2009\u00bb<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-un-laureat-meritant-et-surpris\">Un laur\u00e9at m\u00e9ritant et surpris<\/h2>\n\n\n\n<p>Daniel Amrein s\u2019est montr\u00e9 ravi dans son discours de remerciement\u2009: \u00ab\u2009Les mots me manquent l\u00e0, \u00e0 moi qui suis parfois un peu grande gueule. Je ne m\u2019attendais pas \u00e0 gagner la couronne boulang\u00e8re\u2009\u00bb. L\u2019insigne de la couronne boulang\u00e8re aura bien entendu une place d\u2019honneur \u00e0 c\u00f4t\u00e9 de son four \u00e0 bois, a ajout\u00e9 le laur\u00e9at. Dans son discour, il a surtout remerci\u00e9 son \u00e9quipe\u2009: \u00ab\u2009Je ne pourrais pas \u00eatre l\u2019\u2039\u2009excentrique\u2009\u203a que je suis si je n\u2019avais pas au sein de l\u2019entreprise quelques personnes normales pour m\u2019accompagner dans mes \u2039\u2009d\u00e9lires\u2009\u203a et y apporter quelques corrections. C\u2019est extr\u00eamement plaisant de pouvoir faire ce que l\u2019on veut. Je ne veux pas non plus \u00eatre le meilleur, je veux juste faire mon pain.\u2009\u00bb<\/p>\n\n\n\n<p> Pour finir, M. Amrein a r\u00e9v\u00e9l\u00e9 comment il avait trouv\u00e9 le nom de son entreprise, \u00ab\u2009Eigenbr\u00f6tler\u2009\u00bb signifiant \u00ab\u2009excentrique\u2009\u00bb en allemand\u2009: les clients de l\u2019\u00e9poque n\u2019\u00e9taient pas tous fans de son pain lorsqu\u2019il a repris la boulangerie de son p\u00e8re, ils parlaient du jeune successeur comme d\u2019un \u00ab\u2009excentrique\u2009\u00bb. \u00ab\u2009Je l\u2019ai entendu dire quelque part, je l\u2019ai repris et j\u2019ai dit \u00e0 ma partenaire qu\u2019en fait, nous \u00e9tions effectivement des excentriques.\u2009\u00bb Ce nom particulier a \u00e9t\u00e9 comme un six \u00e0 la loterie pour lui, parce qu\u2019il aurait notamment \u00e9veill\u00e9 la curiosit\u00e9 des m\u00e9dias.
