La Grindelwald Bakery GmbH doit non exceller dans son m\u00e9tier, mais aussi savoir le raconter de mani\u00e8re compr\u00e9hensible. Tamara et Christian Bigler misent pour cela sur des produits ancr\u00e9s localement\u2009: par exemple le b\u00e2tonnet aux herbes alpines pr\u00e9par\u00e9 avec du beurre et des herbes du village\u2009; le pain Wetterhorn dont l\u2019id\u00e9e est n\u00e9e sur le sommet du m\u00eame nom et dont le levain m\u00e8re est pr\u00e9par\u00e9 avec de la glace de glacier\u2009; ou encore le pralin\u00e9 Nordwand, un hommage \u00e0 la face nord de l\u2019Eiger. Le marketing naturel s\u2019int\u00e8gre parfaitement \u00e0 ce lieu entre village, montagnes et tourisme. Gabriela Jetzer et Reinhold Messmer, qui dirigent cette entreprise familiale de troisi\u00e8me g\u00e9n\u00e9ration, misent sur des farines monovari\u00e9tales et des c\u00e9r\u00e9ales suisses. La zone de livraison est volontairement limit\u00e9e \u00e0 un rayon d\u2019environ dix kilom\u00e8tres autour de la boulangerie. <\/p>\n\n\n\n<p>La technologie est utilis\u00e9e l\u00e0 o\u00f9 elle sert l\u2019artisanat. D\u2019anciens p\u00e9trins ont notamment \u00e9t\u00e9 num\u00e9ris\u00e9s et les recettes ainsi que les processus ont \u00e9t\u00e9 soigneusement consign\u00e9s. Jetzer fait aussi preuve de mobilit\u00e9 en dehors de la boulangerie\u2009: la \u00abFlotte Flotte\u00bb comprend un caf\u00e9 ambulant, un four \u00e0 bois, une boutique, ainsi que des chariots \u00e0 glaces et \u00e0 soupes. Depuis d\u00e9but 2023, Patricia Bellia-Str\u00e4ssle dirige cette boulangerie de village. L\u2019assortiment comprend des pains \u00e0 longue fermentation, des croissants, des p\u00e2tisseries, des g\u00e2teaux, des macarons et des roul\u00e9s \u00e0 la cannelle. La r\u00e9novation d\u2019une route cantonale devant le magasin pose aujourd\u2019hui un r\u00e9el d\u00e9fi \u00e0 l\u2019entreprise\u2009; les d\u00e9viations ont entra\u00een\u00e9 une forte baisse des recettes.
