A peine six mois plus tard, son propri\u00e9taire, Martin W\u00fcthrich, a pu reprendre son activit\u00e9 dans les m\u00eames locaux gr\u00e2ce \u00e0 une alliance inhabituelle.<\/strong><\/p>\n\n\n\n<p>Fin 2024, c\u2019est le c\u0153ur lourd que Martin W\u00fcthrich a ferm\u00e9 la boulangerie W\u00fcthrich \u00e0 Grindelwald (BE). Il tenait cette boulangerie de village, vieille de 120 ans, en quatri\u00e8me g\u00e9n\u00e9ration. A peine six mois plus tard, les fr\u00e8res Matthias et Lars Michel, exploitants des h\u00f4tels Fiescherblick et Gletschergarten, ont ouvert un caf\u00e9-boulangerie de style scandinave, Kringle, dans les locaux de vente. Comment cela s\u2019est-il fait\u2009? Qu\u2019en pense la client\u00e8le\u2009? Et pourquoi Martin W\u00fcthrich peut-il continuer \u00e0 exercer son m\u00e9tier de boulanger\u2009?<br><\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-pourquoi-avez-vous-du-fermer-la-boulangerie-wuthrich-fin-2024\">Pourquoi avez-vous d\u00fb fermer la boulangerie W\u00fcthrich fin 2024?<\/h3>\n\n\n\n<p>Martin W\u00fcthrich: A cause du manque de personnel. Mes parents et moi travaillions avec des saisonniers, mais ils sont de moins en moins nombreux. Il n\u2019\u00e9tait pas possible de les employer toute l\u2019ann\u00e9e, comme je l\u2019aurais souhait\u00e9. Pour simplement atteindre l\u2019\u00e9quilibre financier, l\u2019effort n\u2019en valait pas la peine.<br>La d\u00e9cision n\u2019a pas \u00e9t\u00e9 facile \u00e0 prendre. Pendant deux ans, j\u2019ai r\u00e9fl\u00e9chi \u00e0 des solutions pour maintenir l\u2019activit\u00e9. Mon p\u00e8re m\u2019a toujours dit de faire ce que je voulais. Les personnes avec lesquelles une reprise aurait \u00e9t\u00e9 envisageable avaient d\u2019autres id\u00e9es en t\u00eate. C\u2019est \u00e0 ce moment-l\u00e0 que j\u2019ai d\u00e9cid\u00e9 que j\u2019en avais assez\u2009! C\u2019est ainsi que mon fr\u00e8re, Lars, et moi avons commenc\u00e9 \u00e0 discuter avec lui. Il voulait louer la boulangerie. Nous avons voulu tenter l\u2019exp\u00e9rience. Avec deux \u00e9tablissements h\u00f4teliers, nous avons la flexibilit\u00e9 n\u00e9cessaire pour organiser le personnel. Nous pouvions offrir cet avantage \u00e0 Martin.<br>Nous avons grandi juste en face. C\u2019est notre boulangerie, c\u2019est l\u00e0 que nous d\u00e9pensions notre argent de poche quand nous \u00e9tions enfants. Elle fait partie du quartier et anime les environs pour les h\u00f4tels.
