Mais \u00e0 une condition: \u00abSi cela me permet de d\u00e9l\u00e9guer les t\u00e2ches r\u00e9p\u00e9titives et de gagner du temps de travail.\u00bb Dans quels domaines est-ce possible, o\u00f9 faudra-t-il continuer de compter sur la main-d\u2019\u0153uvre humaine et est-ce rentable financi\u00e8rement\u2026<\/strong><\/p>\n\n\n\n<p>Avec une trentaine de collaborateurs, la boulangerie-p\u00e2tisserie R\u00e4ber \u00e0 Jona (SG) repr\u00e9sente la bonne moyenne des membres de l\u2019Association suisse des ma\u00eetres boulangers-p\u00e2tissiers. Le propri\u00e9taire Roland R\u00e4ber tient \u00e0 faire entrer le progr\u00e8s num\u00e9rique dans son exploitation. \u00abPour moi, la num\u00e9risation, c\u2019est pouvoir d\u00e9l\u00e9guer des t\u00e2ches routini\u00e8res et gagner du temps de travail\u00bb, explique le ma\u00eetre boulanger-p\u00e2tissier.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-canaux-de-commande-automatises\">Canaux de commande automatis\u00e9s<\/h2>\n\n\n\n<p>Selon Roland R\u00e4ber, le meilleur exemple est le syst\u00e8me de caisse et de commande du caf\u00e9: \u00abLa pire chose qui puisse arriver \u00e0 l\u2019heure du d\u00e9jeuner, c\u2019est que le personnel doive se parler pour se mettre d\u2019accord sur les d\u00e9roulements n\u00e9cessaires.\u00bb En cas de forte affluence, tous les collaborateurs sont concentr\u00e9s sur leur t\u00e2che et \u00abdans leur propre bulle\u00bb. Si celle-ci est constamment perturb\u00e9e par des interventions verbales et doit se r\u00e9orienter, cela n\u2019est pas efficace. \u00c0 cela s\u2019ajoutent les commandes provenant de la succursale: \u00abAvant, elles \u00e9taient communiqu\u00e9es par t\u00e9l\u00e9phone, not\u00e9es \u00e0 la main et achemin\u00e9es vers la cuisine.\u00bb Il arrivait \u00e9galement qu&#8217;elles ne soient pas trait\u00e9es imm\u00e9diatement et qu&#8217;il y ait des erreurs.<\/p>\n\n\n\n<p>Les syst\u00e8mes de caisse et les imprimantes en r\u00e9seau, dont \u00abon n\u2019a jamais assez\u00bb, apportent une bonne solution. Chaque poste de travail, du service des boissons \u00e0 la p\u00e2tisserie en passant par la boulangerie et la cuisine, dispose de son propre appareil sur les deux sites. Les commandes provenant du caf\u00e9 et de la vente sont saisies, enregistr\u00e9es et imprim\u00e9es par l\u2019appareil correspondant au bon endroit. D\u00e9sormais, ceux-ci parviennent automatiquement au service concern\u00e9, il y a moins d\u2019oublis. Sa coll\u00e8gue Olga Shapoval appr\u00e9cie la saisie sur \u00e9cran tactile, pour une raison simple: \u00abL\u2019allemand est une langue \u00e9trang\u00e8re pour moi, et il m\u2019\u00e9tait tr\u00e8s difficile de noter les commandes pour les ap\u00e9ritifs ou les services traiteur.
