Apr\u00e8s les ar\u00f4mes \u00e9pic\u00e9s et r\u00e9confortants, place \u00e0 des saveurs plus fra\u00eeches, plus l\u00e9g\u00e8res et, oui, un peu plus riches en lapins. A peine le carnaval termin\u00e9, le rythme change: il faut temp\u00e9rer la couverture, mouler les formes, am\u00e9nager les points de vente.<\/p>\n\n\n\n<p>P\u00e2ques est bien plus qu\u2019une saison pour notre m\u00e9tier. C\u2019est alors que l\u2019on voit si la planification, le calcul des co\u00fbts et le travail d\u2019\u00e9quipe sont efficaces. Celles et ceux qui sont bien pr\u00e9par\u00e9s vendent davantage et probablement mieux. C\u2019est pr\u00e9cis\u00e9ment durant cette p\u00e9riode intense que se r\u00e9v\u00e8lent nos atouts\u2009: un artisanat authentique, des processus clairs et des produits en quantit\u00e9 limit\u00e9e.<\/p>\n\n\n\n<p>La saisonnalit\u00e9 signifie \u00e9galement que tout n\u2019est pas toujours disponible; il faut oser le vide. Et c\u2019est pr\u00e9cis\u00e9ment cela qui cr\u00e9e de la valeur. Le printemps est synonyme de renouveau. Non pas au sens d\u2019un activisme effr\u00e9n\u00e9, mais d\u2019une prise de conscience. Quels produits soutiennent notre marque? O\u00f9 gagnons-nous de l\u2019argent; et o\u00f9 ne r\u00e9coltons-nous que des applaudissements?
