Cette strat\u00e9gie peut-elle fonctionner?<\/strong><\/p>\n\n\n\n<p>Au d\u00e9but, cela semblait \u00e9trange d\u2019acheter autant. \u00abMais c\u2019est une grande d\u00e9livrance\u2009! Nous pouvons nous concentrer sur les produits qui nous plaisent.\u00bb C\u2019est ainsi que Rolf Weber d\u00e9crit la restructuration de la boulangerie-p\u00e2tisserie-caf\u00e9 Weber \u00e0 Davos, entreprise en 2025. Il dirige l\u2019entreprise avec son fr\u00e8re Adrian. \u00ab\u2009Quand je repense \u00e0 l\u2019ann\u00e9e derni\u00e8re, honn\u00eatement, je me dis que nous aurions d\u00fb le faire beaucoup plus t\u00f4t.\u2009\u00bb<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-pas-un-aveu-de-faiblesse\">Pas un aveu de faiblesse<\/h2>\n\n\n\n<p>\u00abAvant, j\u2019\u00e9tais convaincu qu\u2019il fallait tout faire soi-m\u00eame\u00bb, explique le boulanger-p\u00e2tissier grison. Il a chang\u00e9 d\u2019avis. Ce revirement est d\u00fb \u00e0 un calcul de rentabilit\u00e9 effectu\u00e9 d\u00e9but 2025. \u00abNous avons remarqu\u00e9 que le d\u00e9partement p\u00e2tisserie-confiserie \u00e9tait rentable trois mois par an. Le reste du temps, le r\u00e9sultat \u00e9tait nul, voire n\u00e9gatif.\u00bb<\/p>\n\n\n\n<p>La situation g\u00e9ographique du commerce, situ\u00e9 dans une station de sports d\u2019hiver, se traduisait soit par des co\u00fbts de personnel trop \u00e9lev\u00e9s, soit par une qualit\u00e9 de produits fluctuante. \u00abIl est tr\u00e8s difficile de proposer un assortiment large et rentable\u00bb, explique Rolf Weber. \u00abJe suis certain qu\u2019il faut se sp\u00e9cialiser \u00e0 long terme.
