Conclusion : les habitudes changent. Le prix du pain a connu une hausse significative.<\/strong><\/p>\n\n\n\n<p>\u00abLa commodit\u00e9 des plats pr\u00e9cuisin\u00e9s s\u00e9duit \u00e0 nouveau de plus en plus de consommateurs, tandis que les produits n\u00e9cessitant une pr\u00e9paration voient leur demande fl\u00e9chir\u00bb, \u00e9crit l&#8217;Office f\u00e9d\u00e9ral de l&#8217;agriculture sur son site web. Ces derniers \u00e9taient tr\u00e8s demand\u00e9s pendant la pand\u00e9mie de coronavirus. Selon l&#8217;OFAG, la consommation de produits semi-finis (par exemple les pizzas \u00e0 cuire) a ainsi augment\u00e9 d&#8217;environ 22 % entre 2021 et 2024. En revanche, les ventes de p\u00e2tes pr\u00eates \u00e0 l&#8217;emploi et de farine ont nettement diminu\u00e9, jusqu&#8217;\u00e0 pr\u00e8s de 10 %. <\/p>\n\n\n\n<p>Les ventes de pain et de produits de boulangerie ont augment\u00e9 de 9,7 %. Une partie de cette augmentation serait due \u00e0 un changement dans les habitudes de consommation de pain frais. Les consommateurs ach\u00e8teraient de plus en plus de petits pains et de pains saisonniers plus chers. Dans le m\u00eame temps, les pains moins chers, tels que le pain bis et le pain mi-blanc, seraient moins demand\u00e9s. L&#8217;OFAG interpr\u00e8te cela comme une augmentation parfois significative des prix.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-les-chiffres-en-detail\"><strong>Les chiffres en d\u00e9tail<\/strong><\/h2>\n\n\n\n<p>En 2024, les consommateurs ont achet\u00e9 pour 2617,5 millions de francs de pain et de produits de boulangerie dans le commerce de d\u00e9tail suisse. Cela correspond \u00e0 un volume total de 266045 tonnes de pain et de produits de boulangerie. Selon l&#8217;OFAG, les ventes ont diminu\u00e9 d&#8217;environ 1 % entre 2021 et 2024. Cette l\u00e9g\u00e8re baisse est principalement attribu\u00e9e aux cat\u00e9gories suivantes : pain de longue conservation : de 43 382 \u00e0 41 669 tonnes ; p\u00e2tisseries \/ g\u00e2teaux \/ roul\u00e9s : de 10 650 \u00e0 9 345 tonnes ; p\u00e2te : de 19 567 \u00e0 18 537 tonnes.<\/p>\n\n\n\n<p>Ce rapport examine la demande en pain, produits de boulangerie et farine d&#8217;un point de vue global du march\u00e9. Il pr\u00e9sente l&#8217;\u00e9volution du chiffre d&#8217;affaires et des ventes de pain, produits de boulangerie et farine dans le commerce de d\u00e9tail suisse. L&#8217;analyse de la demande pour ces produits est effectu\u00e9e au niveau des diff\u00e9rentes cat\u00e9gories de produits, telles que le pain frais ou la farine blanche.
