Gr\u00e2ce \u00e0 son exp\u00e9rience, \u00e0 sa capacit\u00e9 de d\u00e9cision, au savoir-faire de ses partenaires et \u00e0 la solidarit\u00e9 de son personnel, son propri\u00e9taire, Christian Hertig, parvient \u00e0 r\u00e9soudre la quadrature du cercle.<\/strong><\/p>\n\n\n\n<p>Pour Christian Hertig, chaque minute compte. Il arrive un peu plus tard que pr\u00e9vu apr\u00e8s un entretien. En production, la pr\u00e9paration de la livraison destin\u00e9e \u00e0 un client pour la F\u00eate f\u00e9d\u00e9rale de lutte suisse et des jeux alpestres bat son plein, \u00e0 la veille des vacances tant attendues. Son \u00e9quipe, compos\u00e9e de 18 nationalit\u00e9s, est tr\u00e8s concentr\u00e9e, mais les plaisanteries fusent autour de la table de travail. Christian Hertig sourit, observe attentivement, donne des instructions \u00e0 voix basse\u2009: un contact visuel, un signe de t\u00eate, et les mains continuent de virevolter.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-de-combattant-solitaire-a-entrepreneur\">De combattant solitaire \u00e0 entrepreneur<\/h2>\n\n\n\n<p>Lorsqu\u2019une commande doit \u00eatre livr\u00e9e dans l\u2019urgence, du jour au lendemain, il est pr\u00e9sent au fournil. Il sait faire, et pas seulement ici. En deux ans, il a mis en place la production, la logistique et la vente de Panesano AG, presque \u00e0 lui tout seul. Il prend des d\u00e9cisions rapidement et appr\u00e9cie les partenaires capables de r\u00e9fl\u00e9chir avec lui pour faire avancer ses projets. C\u2019est notamment le cas de Claude Migr\u00e9, chef de projet chez Wuest AG. Avec Stutz AG, l\u2019entreprise est le partenaire de distribution et de service du WP Bakery Group en Suisse.<\/p>\n\n\n\n<p>Christian Hertig mise sur le savoir-faire, les \u00e9quipements et les fours pour \u00eatre plus efficace, plus flexible et plus rapide que ses concurrents. \u00abLa concurrence est rude\u00bb, explique-t-il. Panesano livre, avec un partenaire logistique, des produits de boulangerie frais et surgel\u00e9s au commerce de d\u00e9tail, au commerce de gros, \u00e0 la restauration et \u00e0 la restauration collective.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-efficacite-et-savoir-faire-dans-le-fonctionnement-continu\">Efficacit\u00e9 et savoir-faire dans le fonctionnement continu<\/h2>\n\n\n\n<p>Christian Hertig recherche des niches, ose innover, accepte des commandes que d\u2019autres jugent trop urgentes et produit en deux \u00e9quipes, sept jours sur sept. La station de trempage \u00e0 alimentation automatique est mise \u00e0 l\u2019arr\u00eat apr\u00e8s le travail de nuit, tandis qu\u2019\u00e0 quelques m\u00e8tres de l\u00e0, la ligne de production de petites pi\u00e8ces fonctionne presque en continu, jour et nuit: petits pains de diff\u00e9rents grammages et St\u00fcpfelbildern motifs d\u2019estampillage, ainsi que Teigrollen rouleaux de p\u00e2te destin\u00e9s aux bretzels.<\/p>\n\n\n\n<p>Les jours de forte activit\u00e9, c\u2019est l\u2019effervescence devant les fours \u00e0 chariots, \u00e0 l\u2019image de la gare centrale de Zurich aux heures de pointe. Les chariots sont align\u00e9s en plusieurs rang\u00e9es, pr\u00eats \u00e0 \u00eatre enfourn\u00e9s. Un nouveau four est en service depuis peu. Une minute de cuisson en moins pour un r\u00e9sultat identique\u2009: voil\u00e0 un argument qui a convaincu Christian Hertig.<\/p>\n\n\n\n<p>Des tours de bureaux, des h\u00f4tels, en face de la gare. Qui imaginerait trouver ici une boulangerie artisanale? Et pourtant, comme dans bien des petites entreprises, un point de vente \u00e0 la fen\u00eatre accueille la client\u00e8le de 6 \u00e0 14 heures. Christian Hertig se r\u00e9jouit de la pr\u00e9sence du personnel des bureaux voisins et des artisans qui r\u00e9novent l\u2019int\u00e9rieur et l\u2019ext\u00e9rieur du b\u00e2timent de plusieurs \u00e9tages, sans interruption d\u2019activit\u00e9.<\/p>\n\n\n\n<p>\u00abAutrefois, on fabriquait ici des proth\u00e8ses de hanche et de genou\u00bb, raconte-t-il. Les \u00e9tages sont en fait trop bas pour une production moderne, d\u2019autant qu\u2019on travaille sur deux niveaux. Pourquoi cet endroit\u2009? Les trajets de livraison vers la client\u00e8le de la r\u00e9gion zurichoise sont courts et la ligne de tram 4 s\u2019arr\u00eate juste en face. Pour Christian Hertig, chaque minute compte.
