Alors que le secteur de la production reste stable apr\u00e8s la hausse enregistr\u00e9e l\u2019ann\u00e9e derni\u00e8re, le commerce de d\u00e9tail peut se targuer d\u2019une croissance significative.<\/strong><\/p>\n\n\n\n<p>Les signaux positifs provenant de ces deux secteurs ont un certain impact\u2009: les responsables de la branche y voient en effet une belle opportunit\u00e9 pour promouvoir la rel\u00e8ve. Lisa Frunz, membre du comit\u00e9 central responsable du commerce de d\u00e9tail, ainsi que Peter Signer, responsable de la formation en production, voient dans la tendance actuelle une chance pour la branche et soulignent l\u2019importance d\u2019une promotion active de la rel\u00e8ve.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" width=\"864\" height=\"585\" src=\"https:\/\/swissbaker.ch\/wp-content\/uploads\/2025\/12\/lernendenzahlen_sbc_2025_f.jpg\" alt=\"\" class=\"wp-image-129827\" srcset=\"https:\/\/swissbaker.ch\/wp-content\/uploads\/2025\/12\/lernendenzahlen_sbc_2025_f.jpg 864w, https:\/\/swissbaker.ch\/wp-content\/uploads\/2025\/12\/lernendenzahlen_sbc_2025_f-768x520.jpg 768w\" sizes=\"(max-width: 864px) 100vw, 864px\" \/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-le-commerce-de-detail-en-forte-croissance\">Le commerce de d\u00e9tail en forte croissance<\/h2>\n\n\n\n<p>Apr\u00e8s cinq ann\u00e9es de recul, la tendance a l\u00e9g\u00e8re chang\u00e9\u2009: en 2025, 202 apprentis ont commenc\u00e9 leur formation dans le commerce de d\u00e9tail, soit une augmentation d\u2019environ 25\u202f% par rapport aux 161 de l\u2019ann\u00e9e pr\u00e9c\u00e9dente. Cette hausse concerne aussi bien les gestionnaires du commerce de d\u00e9tail CFC, ce qui est tr\u00e8s r\u00e9jouissant, que les assistants du commerce de d\u00e9tail AFP. Pour Lisa Frunz, c\u2019est un signal important\u2009: \u00ab\u2009Cette augmentation nous donne un nouvel \u00e9lan. Nous devons continuer \u00e0 rester visibles, \u00e0 montrer nos valeurs et \u00e0 \u00eatre fiers de notre m\u00e9tier et de notre branche. C\u2019est ainsi que nous convaincrons les jeunes et leur entourage.\u2009\u00bb<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-la-production-reste-en-bonne-voie\">La production reste en bonne voie<\/h2>\n\n\n\n<p>Au total, 499 jeunes ont commenc\u00e9 une formation dans le domaine de la production \u00e0 l\u2019\u00e9t\u00e9 2025, soit en tant que boulanger-p\u00e2tissier-confiseur CFC, soit dans le cadre d\u2019une formation AFP. Ce chiffre est l\u00e9g\u00e8rement sup\u00e9rieur \u00e0 celui de l\u2019ann\u00e9e pr\u00e9c\u00e9dente (491) et confirme une stabilisation apr\u00e8s les baisses enregistr\u00e9es les ann\u00e9es pr\u00e9c\u00e9dentes.<\/p>\n\n\n\n<p>La majorit\u00e9 a de nouveau choisi la fili\u00e8re boulangerie-p\u00e2tisserie, m\u00eame si l\u2019on constate une baisse de 32 par rapport \u00e0 l\u2019ann\u00e9e pr\u00e9c\u00e9dente. Dans le m\u00eame temps, les fili\u00e8res p\u00e2tisserie-confiserie et les apprentissages AFP ont progress\u00e9. Malgr\u00e9 une croissance mod\u00e9r\u00e9e, la tendance est claire\u2009: la production continue de s\u2019affirmer.<\/p>\n\n\n\n<p>Peter Signer se r\u00e9jouit de cette \u00e9volution: \u00abC\u2019est formidable de voir que nous avons pu maintenir le niveau, voire l\u2019augmenter l\u00e9g\u00e8rement. Mais nous devons rester actifs et continuer \u00e0 susciter l\u2019enthousiasme des jeunes pour notre artisanat.\u00bb<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-les-professionnels-de-demain\">Les professionnels de demain<\/h2>\n\n\n\n<p>L\u2019enqu\u00eate du barom\u00e8tre des transitions du Secr\u00e9tariat d\u2019\u00c9tat \u00e0 la formation, \u00e0 la recherche et \u00e0 l\u2019innovation indique que le march\u00e9 suisse des places d\u2019apprentissage est rest\u00e9 stable en 2025.
