La confiserie Eichenberger ach\u00e8te la couverture de l\u2019ours \u00e0 Choba Choba, une marque de chocolat bas\u00e9e \u00e0 Berne. Le cacao utilis\u00e9 pour la couverture provient du P\u00e9rou. Choba Choba repose sur un mod\u00e8le social\u2009: les cultivateurs de cacao sont non seulement des producteurs, mais aussi des copropri\u00e9taires de la marque de chocolat, avec un droit de regard, une responsabilit\u00e9 partag\u00e9e et une participation aux b\u00e9n\u00e9fices.<\/p>\n\n\n\n<p>\u00abEichenberger a \u00e9t\u00e9 l\u2019un des premiers confiseurs \u00e0 travailler avec notre couverture\u00bb, confie Eric Garnier, fondateur et pr\u00e9sident du conseil d\u2019administration de Choba Choba. \u00abNous avons un d\u00e9nominateur commun: d\u2019un c\u00f4t\u00e9, une marque de chocolat appartenant \u00e0 des cultivateurs p\u00e9ruviens, bas\u00e9e \u00e0 Berne, et de l\u2019autre, le savoir-faire artisanal bernois.\u00bb Le cacao utilis\u00e9 pour la couverture provient de l\u2019agroforesterie, une m\u00e9thode de culture durable dans laquelle les cacaoyers sont cultiv\u00e9s avec des arbres d\u2019ombrage et d\u2019autres plantes utiles.<\/p>\n\n\n\n<p>Quelle importance rev\u00eat pour la confiserie Eichenberger le fait que le chocolat de son ours provienne d\u2019une culture durable\u2009? \u00abNous soutenons des projets tels que celui de Choba Choba et y voyons une valeur ajout\u00e9e \u00e9vidente, en particulier lorsque la durabilit\u00e9 et une culture proche de la nature sont mises en \u0153uvre de mani\u00e8re cr\u00e9dible et communiqu\u00e9es de mani\u00e8re transparente\u00bb, explique Daniel Eichenberger, g\u00e9rant et propri\u00e9taire de la confiserie.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-la-production-de-cacao-sous-pression\">La production de cacao sous pression<\/h2>\n\n\n\n<p>Le cacao pousse mieux dans les r\u00e9gions tropicales o\u00f9 l\u2019humidit\u00e9 de l\u2019air est \u00e9lev\u00e9e et les temp\u00e9ratures stables; des conditions qui sont de plus en plus menac\u00e9es. Aujourd\u2019hui d\u00e9j\u00e0, de nombreux petits cultivateurs vivant le long de l\u2019\u00e9quateur ressentent les effets du changement climatique: des p\u00e9riodes de s\u00e9cheresse plus longues, des saisons des pluies irr\u00e9guli\u00e8res et des maladies plus fr\u00e9quentes nuisent \u00e0 leurs plantations de cacao. Dans le m\u00eame temps, les connaissances en mati\u00e8re de m\u00e9thodes de culture durables et l\u2019acc\u00e8s aux intrants font souvent d\u00e9faut. Les arbres suppl\u00e9mentaires pr\u00e9sents dans la plantation absorbent le CO2 et am\u00e9liorent consid\u00e9rablement la qualit\u00e9 du sol. Mais pour que cette m\u00e9thode de culture devienne la norme, il faut \u00e9galement mieux comprendre la diversit\u00e9 des vari\u00e9t\u00e9s locales de cacao\u2009: \u00abSi nous voulons miser sur une plus grande diversit\u00e9 et sur des syst\u00e8mes agroforestiers, nous avons \u00e9galement besoin de vari\u00e9t\u00e9s de cacao adapt\u00e9es \u00e0 des conditions de culture ombrag\u00e9es\u00bb, explique Eric Garnier, avant d\u2019ajouter: \u00abSi nous perdons ces vari\u00e9t\u00e9s, nous r\u00e9duisons notre marge de man\u0153uvre pour l\u2019avenir, alors que le changement climatique et la pression des maladies s\u2019intensifient.\u00bb<\/p>\n\n\n\n<p>La diversit\u00e9 locale des vari\u00e9t\u00e9s de cacao est essentielle pour s\u2019adapter au changement climatique\u2009: la culture agroforesti\u00e8re de vari\u00e9t\u00e9s locales adapt\u00e9es, plus r\u00e9sistantes aux maladies et \u00e0 la s\u00e9cheresse, permet d\u2019obtenir une culture du cacao plus robuste. Avec le soutien de la Plate-forme suisse du cacao durable pour un cacao durable, Choba Choba m\u00e8ne un projet pionnier dans la r\u00e9gion p\u00e9ruvienne de San Mart\u00edn. L\u2019objectif est d\u2019\u00e9tudier et de pr\u00e9server la grande diversit\u00e9 g\u00e9n\u00e9tique du cacao. L\u2019id\u00e9e est de trouver des \u00abarbres mod\u00e8les\u00bb, des vari\u00e9t\u00e9s de cacao, qui se pr\u00eatent particuli\u00e8rement bien \u00e0 des m\u00e9thodes de culture durables et ax\u00e9es sur la qualit\u00e9. De tels projets contribuent de mani\u00e8re d\u00e9cisive \u00e0 la durabilit\u00e9. Ils cr\u00e9ent des connaissances, pr\u00e9servent les ressources g\u00e9n\u00e9tiques et permettent une culture du cacao qui peut \u00eatre transmise d\u2019une g\u00e9n\u00e9ration \u00e0 l\u2019autre. \u00abGr\u00e2ce \u00e0 la plateforme sur le cacao, nous avons pu cartographier 140 vari\u00e9t\u00e9s de cacao et cr\u00e9er un jardin de conservation comprenant 89 g\u00e9notypes\u00bb, explique Eric Garnier.<\/p>\n\n\n\n<p>L\u2019ours Choba Choba r\u00e9unit deux mondes\u2009: celui des personnes qui cultivent le cacao et celui de celles qui le d\u00e9gustent sous forme de chocolat. Comment la client\u00e8le r\u00e9agit-elle \u00e0 cet ours bernois aux racines amazoniennes p\u00e9ruviennes\u2009? \u00abCertains clients s\u2019int\u00e9ressent beaucoup \u00e0 l\u2019origine et au contexte, tandis que d\u2019autres privil\u00e9gient des crit\u00e8res tels que le go\u00fbt et l\u2019apparence. Nous voulons satisfaire les deux groupes.
