Les tendances alimentaires abordent des th\u00e8mes li\u00e9s \u00e0 la num\u00e9risation, tels que l\u2019assurance qualit\u00e9 intelligente et l\u2019am\u00e9lioration de l\u2019efficacit\u00e9, combin\u00e9s \u00e0 la notion de durabilit\u00e9\u2009: pour un avenir avec moins de d\u00e9chets, des flux secondaires \u00e0 valeur ajout\u00e9e et l\u2019utilisation de nouvelles mati\u00e8res premi\u00e8res. Les g\u00e9n\u00e9rations sont de plus en plus connect\u00e9es au monde entier et associent des habitudes alimentaires traditionnelles et modernes, comme la \u00ab\u2009snackification\u2009\u00bb\u2009; il en r\u00e9sulte de nouvelles exp\u00e9riences sensorielles alliant ar\u00f4mes, textures et formes.
