Les confiseurs et chocolatiers sont de plus en plus nombreux \u00e0 miser sur la profondeur aromatique du gin pour sublimer leurs cr\u00e9ations. Avec ou sans alcool, le gin sera sous les feux des projecteurs lors du Concours du Pralin\u00e9 \u00e0 l\u2019eau-de-vie 2026, o\u00f9 il deviendra le c\u0153ur cr\u00e9atif de l\u2019\u00e9v\u00e9nement. Une symbiose savoureuse entre artisanat, innovation et art de la distillation.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-accords-de-couvertures\">ACCORDS DE COUVERTURES<\/h2>\n\n\n\n<p>La diversit\u00e9 des plantes utilis\u00e9es dans le gin (avec ou sans alcool) se marie harmonieusement avec les diff\u00e9rentes sortes de chocolat. Les couvertures cors\u00e9es \u00e0 forte teneur en cacao soulignent les notes \u00e9pic\u00e9es et intenses du gin, tandis que les couvertures fruit\u00e9es ou claires accentuent ses facettes florales et l\u00e9g\u00e8res.<br>Pour appr\u00e9cier l\u2019accord parfait entre le gin et les pralin\u00e9s, il est recommand\u00e9 de m\u00e2cher d\u2019abord un morceau de couverture, puis de prendre une petite gorg\u00e9e de gin et de m\u00e9langer lentement les deux dans la bouche. Il a fallu attendre la vague des cocktails des ann\u00e9es 1920 et l\u2019influence des \u00e9lites passionn\u00e9es de voyages pour qu\u2019il fasse lentement son entr\u00e9e dans les bars haut de gamme de Zurich et de Gen\u00e8ve.<br>Mais ce n\u2019est qu\u2019au XXIe\u202fsi\u00e8cle que le gin a connu une v\u00e9ritable perc\u00e9e. Le mouvement \u00ab\u2009craft\u2009\u00bb dans le monde des spiritueux a suscit\u00e9 un regain d\u2019int\u00e9r\u00eat pour le gin artisanal dans notre pays. Depuis le d\u00e9but des ann\u00e9es 2000, on voit appara\u00eetre de plus en plus de gins suisses originaux, qui contiennent souvent des plantes r\u00e9gionales provenant des Alpes, des for\u00eats et des jardins d\u2019herbes aromatiques.<br>En 2014, la premi\u00e8re distillerie exclusivement d\u00e9di\u00e9e au gin a ouvert ses portes en Suisse (nginious\u2009!). Depuis, une culture du gin tr\u00e8s vari\u00e9e s\u2019est d\u00e9velopp\u00e9e, s\u00e9duisant par ses ingr\u00e9dients locaux et durables ainsi que par ses recettes cr\u00e9atives.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-comment-le-gin-est-il-fabrique\">COMMENT LE GIN EST-IL FABRIQU\u00c9\u2009?<\/h2>\n\n\n\n<p>Le gin est bien plus qu\u2019une simple eau-de-vie de geni\u00e8vre. La base de tout gin est un alcool neutre aromatis\u00e9 avec une multitude de plantes. Le geni\u00e8vre occupe toujours une place centrale, accompagn\u00e9 d\u2019ingr\u00e9dients tels que les graines de coriandre, la racine d\u2019ang\u00e9lique, le gingembre, les \u00e9corces d\u2019agrumes ou de citron vert, le poivre cub\u00e8be ou les graines de paradis. Selon la recette, d\u2019autres plantes plus inhabituelles sont \u00e9galement utilis\u00e9es\u2009; et pratiquement aucune limite n\u2019est fix\u00e9e \u00e0 la cr\u00e9ativit\u00e9.<\/p>\n\n\n\n<p>Il existe deux proc\u00e9d\u00e9s de fabrication\u2009:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Cold Compounding\u2009: les essences des plantes sont m\u00e9lang\u00e9es \u00e0 l\u2019alcool. Ce proc\u00e9d\u00e9 est simple, mais fait l\u2019objet de critiques dans le milieu.<\/li>\n\n\n\n<li>Distilled Gin\u2009: les plantes sont mac\u00e9r\u00e9es dans l\u2019alcool, puis distill\u00e9es ensemble. Les ingr\u00e9dients frais ou s\u00e9ch\u00e9s conf\u00e8rent des ar\u00f4mes diff\u00e9rents.
