Les d\u00e9fis restent toutefois importants pour les membres de la BCS. Telle est la conclusion de la r\u00e9union annuelle des repr\u00e9sentants des deux organisations.<\/strong><\/p>\n\n\n\n<p>Les r\u00e9sultats d\u00e9finitifs de la r\u00e9colte ne sont pas encore disponibles. Il faut en effet attendre les r\u00e9sultats des analyses en laboratoire et des tests de panification. Ils seront pr\u00e9sent\u00e9s lors de la Journ\u00e9e de la qualit\u00e9 du bl\u00e9 le 18\u202fnovembre.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-de-bonnes-conditions-climatiques\">De bonnes conditions climatiques<\/h2>\n\n\n\n<p>Les conditions climatiques ont \u00e9t\u00e9 globalement favorables pour le bl\u00e9\u2009: l\u2019automne 2024 a \u00e9t\u00e9 doux et pluvieux. L\u2019hiver a \u00e9galement \u00e9t\u00e9 doux. Le printemps a \u00e9t\u00e9 chaud et sec, voire tr\u00e8s sec, avec un ensoleillement sup\u00e9rieur \u00e0 la moyenne. Les pr\u00e9cipitations de fin juillet et d\u00e9but ao\u00fbt ont retard\u00e9 la r\u00e9colte dans les r\u00e9gions o\u00f9 les plantes m\u00fbrissent plut\u00f4t tardivement.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-la-qualite-est-solide\">\u00abLa qualit\u00e9 est solide\u00bb<\/h2>\n\n\n\n<p>Les repr\u00e9sentants de la FMS se sont montr\u00e9s prudemment optimistes lors de la r\u00e9union avec la BCS: \u00abLa qualit\u00e9 est convenable\u00bb, a d\u00e9clar\u00e9 le directeur Lorenz Hirt. Il a toutefois soulign\u00e9 que les stocks \u00e9taient compl\u00e8tement vides avant la r\u00e9colte. Il y a plut\u00f4t trop de bl\u00e9 de qualit\u00e9 IP-Suisse, tandis que le bl\u00e9 issu de l\u2019agriculture PER fait d\u00e9faut. La planification est donc difficile. Les meuniers ont \u00e9galement relev\u00e9 que la r\u00e9colte variait consid\u00e9rablement selon les r\u00e9gions ou les zones, la qualit\u00e9 allant de m\u00e9diocre \u00e0 excellente. Il est \u00e9galement r\u00e9jouissant de constater que, selon les repr\u00e9sentants des meuniers, la superficie cultiv\u00e9e ne diminue pas. En tout \u00e9tat de cause, l\u2019aptitude \u00e0 la panification ne pose aucun probl\u00e8me. La situation est toutefois plut\u00f4t critique en ce qui concerne la quantit\u00e9 et la qualit\u00e9 de l\u2019\u00e9peautre pur.<\/p>\n\n\n\n<p>Lors de la r\u00e9union, le directeur de la BCS, Urs Wellauer-Boschung, a notamment \u00e9voqu\u00e9 les articles r\u00e9cemment publi\u00e9s dans les m\u00e9dias concernant les d\u00e9fis auxquels le secteur de la boulangerie-confiserie est confront\u00e9, ainsi que le d\u00e9clin des entreprises artisanales. La baisse du nombre de membres est similaire \u00e0 celle des ann\u00e9es pr\u00e9c\u00e9dentes.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-patons-importes\">P\u00e2tons import\u00e9s<\/h2>\n\n\n\n<p>Les importations de p\u00e2tons ont \u00e9galement \u00e9t\u00e9 abord\u00e9es lors de la r\u00e9union. Depuis f\u00e9vrier\u202f2025, la d\u00e9claration du pays de production du pain et des produits de boulangerie est obligatoire en Suisse. La mise en \u0153uvre a \u00e9t\u00e9 effectu\u00e9e. Il faut maintenant passer aux contr\u00f4les. Des critiques ont \u00e9t\u00e9 formul\u00e9es \u00e0 l\u2019encontre d\u2019entreprises qui font largement la promotion de la croix suisse, mais n\u2019indiquent l\u2019origine du pain \u00e9tranger qu\u2019en tr\u00e8s petits caract\u00e8res.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-rechercher-le-dialogue-avec-gastrosuisse\">Rechercher le dialogue avec GastroSuisse<\/h2>\n\n\n\n<p>Dans ce contexte, le pr\u00e9sident de la FMS, Thomas Helbling, a sugg\u00e9r\u00e9 d\u2019engager le dialogue avec GastroSuisse afin qu\u2019elle appelle ses membres \u00e0 d\u00e9clarer syst\u00e9matiquement le pain suisse. La discussion a montr\u00e9 que le mieux serait de proc\u00e9der comme pour les vins suisses\u2009: il faudrait mentionner \u00e0 la fois le pays d\u2019origine et la boulangerie-confiserie concern\u00e9e.
