Aujourd\u2019hui, \u00e0 l\u2019aube de mes 62 ans, je transmets cette phrase \u00e0 mes apprentis et apprenties exactement de la m\u00eame mani\u00e8re.<\/p>\n\n\n\n<p>L\u2019air, c\u2019est tout! L\u2019air (je n\u2019\u00e9cris pas ici l\u2019oxyg\u00e8ne) est pr\u00e9sent dans les levains, l\u2019air est pr\u00e9sent dans les ganaches au beurre, l\u2019air est pr\u00e9sent dans les produits \u00e0 base de p\u00e2te feuillet\u00e9e, l\u2019air est pr\u00e9sent dans les tourtes et les p\u00e2tisseries, l\u2019air est pr\u00e9sent dans les glaces. Les produits vendus sans air sont peu nombreux (on peut citer les tablettes de chocolat \u00e0 cet \u00e9gard). Et si un produit ne contient pas d\u2019air, son emballage est assur\u00e9ment a\u00e9r\u00e9, comme en t\u00e9moigne le contenant des lapins de P\u00e2ques.<\/p>\n\n\n\n<p>Sommes-nous pour autant des brasseurs de vent? Devons-nous en avoir honte? En aucune fa\u00e7on! L\u2019air est un \u00e9l\u00e9ment essentiel dans nos m\u00e9tiers, que ce soit dans la boulangerie, la p\u00e2tisserie ou la confiserie. Il est essentiel pour la pousse, le go\u00fbt et l\u2019apparence de nos produits.<\/p>\n\n\n\n<p>On ne peut pas l\u2019acheter chez Pistor, il est gratuit et disponible \u00e0 volont\u00e9. Il est l\u00e0, tout simplement! Mais il faut l\u2019utiliser soi-m\u00eame. Pour cela, il faut de bonnes connaissances professionnelles, de la technique et un certain sens du bon go\u00fbt. A d\u00e9faut, la marge de progression est encore grande.<\/p>\n\n\n\n<p>C\u2019est sans doute ce que mon ma\u00eetre d\u2019apprentissage a voulu m\u2019enseigner en 1979.
