Une collaboration qui valorise les produits artisanaux dans un march\u00e9 toujours plus concurrentiel.<\/strong><\/p>\n\n\n\n<p>Lorsqu\u2019on \u00e9voque le mot \u00abcuisine\u00bb en sa pr\u00e9sence, il vous r\u00e9torque qu\u2019il pr\u00e9f\u00e8re parler d\u2019art de la table. Et c\u2019est vrai qu\u2019avec Fran\u00e7ois Grognuz, cofondateur de la Brasserie de Montbenon \u00e0 Lausanne, chaque plat est pr\u00e9par\u00e9 avec passion. Mais pour bien travailler, il faut choisir les bons produits, \u00e0 commencer par le pain. \u00abC\u2019est un produit essentiel \u00e0 mes yeux et qui fait partie de mon alimentation de base. J\u2019ai eu l\u2019opportunit\u00e9 de go\u00fbter des produits de Bread Store. J\u2019ai \u00e9t\u00e9 conquis par leur saveur et les valeurs de Laurent Buri et de Thomas Marie, les fondateurs de l\u2019entreprise.\u00bb, se souvient Fran\u00e7ois Grognuz. Le partenariat d\u00e9bute en 2019 et se renforce au fil des ans en une solide amiti\u00e9.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-granola-pour-dessert-maison\">Granola pour dessert \u00abmaison\u00bb<\/h2>\n\n\n\n<p>Bread Store approvisionne donc quotidiennement la Brasserie de Montbenon en viennoiseries et diff\u00e9rents pains, surtout du torsad\u00e9. M\u00eame si nous avons de nombreux partenariats, ceux-ci repr\u00e9sentent une petite part de notre activit\u00e9, la principale se concentrant dans nos boulangeries.\u00bb, explique Laurent Buri qui pr\u00e9cise n\u2019avoir jamais d\u00e9march\u00e9 un restaurateur en sept ans d\u2019activit\u00e9. \u00abLes tenanciers d\u00e9couvrent nos produits dans nos magasins. Ces collaborations nous font de la publicit\u00e9 mais il est primordial de choisir des partenaires qui partagent notre philosophie, celle de privil\u00e9gier la qualit\u00e9 et la saveur.\u00bb Cela permet parfois la cr\u00e9ation de plats originaux comme ce dessert servi \u00e0 la Brasserie de Montbenon. \u00abMes enfants adorent le granola de Bread Store. J\u2019ai d\u00e9cid\u00e9 d\u2019utiliser ce produit pour cr\u00e9er un banana &amp; granola, sorte de banana split am\u00e9lior\u00e9. J\u2019ai discut\u00e9 avec mes partenaires qui ont modifi\u00e9 la recette originale du granola pour le personnaliser. C\u2019est uniquement dans ce genre de relations que l\u2019on peut faire du sur-mesure\u00bb, raconte Fran\u00e7ois Grognuz.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-fournisseurs-bien-visibles\">Fournisseurs bien visibles<\/h2>\n\n\n\n<p>L\u2019\u00e9tablissement lausannois n\u2019a pas attendu l\u2019obligation faite aux restaurateurs depuis le 1er\u202ff\u00e9vrier d\u2019indiquer le pays de provenance des produits de boulangerie pour inscrire le nom de son fournisseur sur la carte du restaurant et sur son site internet. Il pratique la m\u00eame philosophie avec tous ses partenaires. \u00ab\u2009Cela fait des ann\u00e9es que nous valorisons les personnes avec qui nous travaillons. Je suis fier de mes fournisseurs et c\u2019est normal de citer la provenance de ces produits que je connais personnellement. Pour Bread Store, j\u2019ai visit\u00e9 leur laboratoire lorsqu\u2019il \u00e9tait \u00e0 Lausanne (NDLA\u2009: il se situe aujourd\u2019hui \u00e0 Crissier) et j\u2019ai observ\u00e9 comment ils pr\u00e9parent leurs pains. Thomas Marie est meilleur ouvrier de France. Ses produits, au m\u00eame titre que les n\u00f4tres, b\u00e9n\u00e9ficieront de la provenance suisse. La seule solution consiste \u00e0 ce que les boulangers continuent de faire de l\u2019excellent travail. Nous ne pourrons jamais concurrencer les industriels sur les prix, mais nous pouvons nous battre pour la qualit\u00e9. Certains restaurateurs montrent l\u2019exemple en mettant en sc\u00e8ne le pain avec style ou en l\u2019int\u00e9grant dans leurs menus tout en mentionnant la boulangerie-confiserie. Cette s\u00e9rie a pour but d\u2019augmenter la valorisation du pain et d\u2019inciter les restaurateurs et les membres de la BCS \u00e0 mentionner, outre le pays d\u2019origine, la boulangerie-confiserie.
