L\u2019effet booster d\u2019une pand\u00e9mie et une succession d\u2019opportunit\u00e9s ont notamment contribu\u00e9 \u00e0 la r\u00e9ussite du couple.<\/strong><\/p>\n\n\n\n<p>En bordure de route, le Grini accueille Ayent\u00f4ts et clients de passage, depuis presque 40 ans. Rafael Parreira a repris la boulangerie-confiserie des mains de son ancien patron, Yves Constantin, en 2020. \u00ab\u2009Cela faisait quelques ann\u00e9es qu\u2019il parlait de s\u2019en s\u00e9parer. Le covid a pr\u00e9cipit\u00e9 la mise en vente\u2009\u00bb, explique l\u2019actuel propri\u00e9taire. L\u2019enfant du village a saisi l\u2019occasion et concr\u00e9tis\u00e9 l\u2019un de ses r\u00eaves, \u00e0 23 ans\u2009: \u00ab\u2009ne pas \u00eatre un simple ouvrier\u2009\u00bb. L\u2019acquisition s\u2019est faite en deux temps\u2009: d\u2019abord le fonds de commerce, puis les murs.<br>M\u00e9lanie Niedegger a, entre-temps, rejoint l\u2019aventure. Apr\u00e8s l\u2019abandon de ses \u00e9tudes d\u2019arch\u00e9ologie, la Savi\u00e9sanne passionn\u00e9e de p\u00e2tisserie a achev\u00e9 son apprentissage en 2019. \u00ab\u2009En septembre, j\u2019ai commenc\u00e9 \u00e0 travailler au Grini. (\u2026) Lorsque Rafael l\u2019a repris, il m\u2019a propos\u00e9 de g\u00e9rer la p\u00e2tisserie.\u2009\u00bb Les deux jeunes gens se sont rapproch\u00e9s. Depuis, ils g\u00e8rent en couple la soci\u00e9t\u00e9.<br>A pr\u00e9ciser que Proback a second\u00e9 les deux entrepreneurs \u00e0 leurs d\u00e9buts, en particulier sur des points d\u2019hygi\u00e8ne et de rentabilit\u00e9. Ils encouragent d\u2019ailleurs unanimement leurs confr\u00e8res avides d\u2019ind\u00e9pendance \u00e0 b\u00e9n\u00e9ficier de conseils et d\u2019aide de professionnels.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-croissance-multipliee-par-trois\">Croissance multipli\u00e9e par trois<\/h2>\n\n\n\n<p>A en croire l\u2019\u00e9volution de leur entreprise, cela semble plut\u00f4t leur r\u00e9ussir. En un peu plus de quatre ans, le chiffre d\u2019affaires a tripl\u00e9. Deux points de vente compl\u00e8tent le tea-room originel\u2009: le premier \u00e0 Conthey (VS), depuis 2022, et le second \u00e0 Grimisuat (VS), depuis 2023. Pour le premier, une cliente souhaitait ouvrir une \u00e9picerie et y vendre certains de leurs produits. Le projet a tra\u00een\u00e9 et capot\u00e9 faute de moyens financiers. \u00ab\u2009Le local avec places de parc \u00e9tait toujours \u00e0 remettre. Il se situait dans le village, en dehors de la zone commerciale. Nous l\u2019avons achet\u00e9 et r\u00e9nov\u00e9 durant huit mois\u2009\u00bb, pr\u00e9cise Mme\u202fNiedegger. Le sc\u00e9nario est plus ou moins identique pour le second\u2009: \u00ab\u2009Il s\u2019agit d\u2019un tea-room que nous livrions qui ne fonctionnait pas. Le g\u00e9rant nous a propos\u00e9 d\u2019en reprendre la location.\u2009\u00bb<br>Le nombre de collaborateurs a aussi pris l\u2019ascenseur, passant de neuf \u00e0 une trentaine. Deux tiers \u0153uvrent \u00e0 la vente et le solde, dont quatre apprentis, \u00e0 la production. Cela pourrait cependant \u00e9voluer \u00e0 moyen terme. Un projet cons\u00e9quent, en lien avec la transformation du centre du village en zone pi\u00e9tonne, est en discussion. Les deux artisans n\u2019en diront pas plus.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-un-sacre-tremplin\">\u00ab\u2009Un sacr\u00e9 tremplin\u2009\u00bb<\/h2>\n\n\n\n<p>Le couple estime que le confinement a incontestablement acc\u00e9l\u00e9r\u00e9 la croissance de leur \u00e9tablissement. \u00ab\u2009Les premiers mois ont \u00e9t\u00e9 tr\u00e8s difficiles. Nous \u00e9tions \u00e0 flux tendus avec tr\u00e8s peu de liquidit\u00e9s\u2009\u00bb, se rem\u00e9more Rafael Parreira, et sa compagne d\u2019ajouter\u2009: \u00ab\u2009Nous passions notre temps au laboratoire. Il fallait aussi g\u00e9rer la paperasse li\u00e9e \u00e0 la pand\u00e9mie. Mais comme notre commerce \u00e9tait l\u2019un des rares ouverts, les gens se sont d\u00e9plac\u00e9s. Ils ont alors vu que la boulangerie ne s\u2019arr\u00eatait pas \u00e0 la vente de pain. Cela a constitu\u00e9 un sacr\u00e9 tremplin.\u2009\u00bb<br>Apr\u00e8s le covid, les ventes \u00e0 l\u2019emporter se sont perp\u00e9tu\u00e9es. \u00ab\u2009L\u2019essentiel de notre chiffre d\u2019affaires s\u2019est d\u2019ailleurs vraiment d\u00e9port\u00e9 sur celles-ci depuis. Cela s\u2019est fait tout seul, notre v\u00e9ritable m\u00e9rite a peut-\u00eatre \u00e9t\u00e9 d\u2019avoir su fid\u00e9liser la client\u00e8le.\u2009\u00bb<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-confectionner-aujourd-hui-pour-demain\">Confectionner aujourd\u2019hui pour demain<\/h2>\n\n\n\n<p>En plus du magasin et du tea-room, environ 10\u202f% des rentr\u00e9es proviennent de livraisons. Les deux boulangers-p\u00e2tissiers privil\u00e9gient des institutions telles que l\u2019arm\u00e9e, des cliniques et des \u00e9coles plut\u00f4t que des h\u00f4tels et des restaurants. \u00ab\u2009Ce choix, explique M. Parreira, limite les p\u00e9riodes creuses que peuvent conna\u00eetre certains coll\u00e8gues. En saison, nous travaillons beaucoup avec les touristes. Et, lorsque les vacances se terminent nous pouvons \u00e0 nouveau compter sur nos livraisons.\u2009\u00bb<br>Cette d\u00e9cision offre un second avantage sur le plan logistique, selon Mme\u202fNiedegger\u2009: \u00ab\u2009Toute notre production est r\u00e9alis\u00e9e la veille. Nous respectons les temps de repos et n\u2019utilisons pas d\u2019additifs. Il n\u2019est pas certain que nous pourrions conserver cette fa\u00e7on de faire, en ciblant des \u00e9tablissements publics. Il leur est parfois compliqu\u00e9 d\u2019anticiper les commandes 24\u202fheures \u00e0 l\u2019avance.\u2009\u00bb<br>Quant \u00e0 ceux qui pensent que volume ne peut rimer avec artisanat, la patronne s\u2019en d\u00e9fend. L\u2019artisanat ne se d\u00e9finit pas au travers des aides \u00e0 la production utilis\u00e9es, mais au travers des ingr\u00e9dients, selon elle. \u00ab\u2009La quasi-totalit\u00e9 des entreprises disposent d\u2019un p\u00e9trin, d\u2019une bouleuse ou d\u2019un laminoir de nos jours. Elles ne sont pas toutes pour autant industrielles. Cela va d\u00e9pendre des mati\u00e8res premi\u00e8res, du savoir-faire et des processus qui composent les recettes.
