Malgr\u00e9 sa situation rurale, l\u2019entreprise cultive un assortiment petit mais raffin\u00e9 qui lui a d\u00e9j\u00e0 permis d\u2019atteindre la finale de la couronne boulang\u00e8re.<\/strong><\/p>\n\n\n\n<p>Les fr\u00e8res et s\u0153urs Manuel Hinder et Nadine Jud nourrissent des projets ambitieux pour l\u2019artisanat du pain du Toggenburg \u00e0 Neu St. Johann (SG)\u2009: \u00abD\u2019ici 2025, nous pr\u00e9voyons de n\u2019utiliser plus que de la farine du Toggenburg pour notre gamme de grands pain\u2009\u00bb, annon\u00e7ait-il \u00e0 Panissimo. Un an plus tard, il regarde pensivement les trois silos \u00e0 farine dans la cave de Toggenburger Brothandwerk \u00e0 Neu St. Johann. \u00abAucune chance, la r\u00e9colte de l\u2019ann\u00e9e derni\u00e8re a \u00e9t\u00e9 catastrophique: le bl\u00e9 amidonnier a \u00e9t\u00e9 un \u00e9chec et nous allons manquer d\u2019\u00e9peautre. Seul le seigle s\u2019en est bien sorti.\u00bb Malgr\u00e9 un bilan interm\u00e9diaire mitig\u00e9, l\u2019objectif se rapproche de plus en plus: sur 15 grands pains, 10 sont fabriqu\u00e9s avec des c\u00e9r\u00e9ales r\u00e9gionales.<\/p>\n\n\n\n<p>L\u2019exigence \u00e9lev\u00e9e de r\u00e9gionalit\u00e9 repr\u00e9sente un d\u00e9fi que l\u2019entreprise s\u2019est elle-m\u00eame impos\u00e9. Cet effort a toutefois \u00e9t\u00e9 r\u00e9compens\u00e9 par un succ\u00e8s particulier l\u2019ann\u00e9e derni\u00e8re.
