Et pourtant, la p\u00e2tisserie et confiserie Schwarzenberger se veut plut\u00f4t discr\u00e8te. \u00ab\u2009Panissimo\u2009\u00bb a cherch\u00e9 \u00e0 s\u2019entretenir avec ce p\u00e2tissier passionn\u00e9 pour retracer son parcours avec lui.<\/strong><\/p>\n\n\n\n<p>Depuis plus de 150 ans, on trouve une petite confiserie entre l\u2019imposante \u00ab\u2009Reine des montagnes\u2009\u00bb et l\u2019idyllique lac des Quatre-Cantons. Thomas Schwarzenberger et son \u00e9pouse Franziska ont repris l\u2019entreprise en 2015. D\u00e9crivant son parcours professionnel, il confirme ses dires en \u00e9voquant l\u2019anecdote suivante tir\u00e9e de sa vie\u2009: \u00ab\u2009A la maternelle, nous sommes all\u00e9s visiter une p\u00e2tisserie peu avant P\u00e2ques. Les nombreux lapins en chocolat m\u2019ont incroyablement plu et \u00e0 partir de l\u00e0, j\u2019ai su quel m\u00e9tier je voulais faire.\u2009\u00bb Rien n\u2019a pu faire fl\u00e9chir sa volont\u00e9. \u00ab\u2009Mes parents voulaient absolument que je d\u00e9couvre d\u2019autres m\u00e9tiers, ce que j\u2019ai fait. Visant l\u2019examen professionnel sup\u00e9rieur, il est ensuite parti \u00e0 l\u2019ouest avec son \u00e9pouse Franziska pour atterrir \u00e0 la confiserie Eichenberger \u00e0 Berne. C\u2019est sous l\u2019aile du chef de production Philipp Fr\u00e9sard que la passion du jeune professionnel s\u2019est v\u00e9ritablement embras\u00e9e, confie-t-il en entretien. \u00ab\u2009A Berne, j\u2019ai eu le temps et le loisir de me concentrer sur la confiserie.\u2009\u00bb<\/p>\n\n\n\n<p>L\u2019\u00e9tude de l\u2019art de la transformation du chocolat a port\u00e9 des fruits quelque peu excentriques. \u00ab\u2009Depuis, je lis tous les jours des livres de recettes\u2009\u00bb, avoue Thomas Schwarzenberger, g\u00ean\u00e9, \u00ab\u2009il y en a partout dans la maison, m\u00eame sur la table de nuit pour le coucher.
