Une ann\u00e9e qui n\u2019aurait pas pu \u00eatre meilleure pour \u00ab\u2009La Patisserie David Schmid\u2009\u00bb \u00e0 Zofingen (AG)\u2026 S\u2019il n\u2019y avait pas eu la pand\u00e9mie. R\u00e9trospective et perspectives avec le couple d\u2019entrepreneurs \u00e0 succ\u00e8s.<\/strong><\/p>\n\n\n\n<p>Nicole et David Schmid ont repris le domaine p\u00e2tisserie et confiserie de l\u2019exploitation des parents du second en 2012. En 2020, le couple d\u00e9cide de se lancer dans une nouvelle voie et ouvre en novembre La Patisserie David Schmid GmbH au c\u0153ur de Zofingen (AG), un univers de saveurs artisanales sur 300 m2 de plain-pied. \u00ab\u2009Un petit bout de France au c\u0153ur de la ville de Zofingen. Avec notre nouveau site de production, nous voulons prendre une autre direction et cr\u00e9er un nouveau monde. Il ne s\u2019agit pas de faire mieux, mais de montrer \u00e0 nos clients le c\u00f4t\u00e9 authentique de l\u2019artisanat de la p\u00e2tisserie\u2009\u00bb, peut-on lire sur le site Internet de La Patisserie.<\/p>\n\n\n\n<p><strong>Cela fait moins de deux ans que La Patisserie a ouvert ses portes. Quels \u00e9taient alors vos objectifs \u00e0 court et moyen terme\u2009?<\/strong><br><strong>David Schmid\u2009:<\/strong> Nous voulions nous concentrer sur un assortiment de base, sur la p\u00e2tisserie fran\u00e7aise, mais aussi proposer une gastronomie plac\u00e9e sous le signe du plaisir de la d\u00e9gustation. L\u2019artisanat doit \u00eatre visible, perceptible. Par ailleurs, nous avons voulu nous lib\u00e9rer de la pression de la performance, qui vole de l\u2019\u00e9nergie, et cr\u00e9er les produits dont nous avons envie. Toutefois, nous ressentons actuellement cette pression.<\/p>\n\n\n\n<p><strong>Nicole Schmid\u2009<\/strong>: C\u2019est comme un gros monstre qui ouvre la bouche le mercredi matin et qui ne nous laisse aucun r\u00e9pit jusqu\u2019au samedi soir. Dimanche, lundi, mardi, lorsque notre magasin est ferm\u00e9, nous devons traiter tout ce qui a \u00e9t\u00e9 laiss\u00e9 en suspens et nous pr\u00e9parer pour \u00eatre pr\u00eats le mercredi. La cr\u00e9ativit\u00e9 et le d\u00e9veloppement de nouvelles cr\u00e9ations sont mis de c\u00f4t\u00e9.<\/p>\n\n\n\n<p><strong>Un succ\u00e8s \u00e9norme en si peu de temps\u2026<br>D.\u202fS.\u2009:<\/strong> Nous avons une offre qui s\u2019adresse \u00e0 tout le monde.<\/p>\n\n\n\n<p><strong>N.\u202fS.\u2009: <\/strong>Lors de la planification et de la mise en \u0153uvre de notre projet, des sp\u00e9cialistes et des conseillers nous ont recommand\u00e9 de conserver nos fournisseurs (cuisiniers, gastronomie, etc.), car il serait difficile de r\u00e9aliser le chiffre d\u2019affaires dont nous avons besoin sur le site de Zofingen avec notre concept. Or, la situation est telle que notre production est satur\u00e9e avec notre caf\u00e9 et notre magasin et que nous ne pouvons plus gu\u00e8re livrer de partenaires.<\/p>\n\n\n\n<p><strong>Vous avez atteint votre objectif en tr\u00e8s peu de temps. Mieux encore\u2009: le succ\u00e8s vous a litt\u00e9ralement submerg\u00e9\u2026<br>D.\u202fS.\u2009: <\/strong>Oui, c\u2019est exact, nous sommes \u00e0 la crois\u00e9e des chemins.
