Les membres ont accept\u00e9 de modifier le cahier des charges en vue de renforcer les exigences pour la production de seigle. Les boulangers les mieux not\u00e9s, lors de la derni\u00e8re taxation ont \u00e9t\u00e9 r\u00e9compens\u00e9s. Quant au projet du Groupe Minoterie de construction d\u2019un moulin \u00e0 Riddes (VS), il se poursuit.<\/strong><\/p>\n\n\n\n<p>Les conditions climatiques de 2021 ont eu pour effet des rendements m\u00e9diocres pour les c\u00e9r\u00e9ales panifiables. Au final ce sont 310 tonnes de seigle qui ont \u00e9t\u00e9 engrang\u00e9es pour l\u2019AOP. Toutefois, les stocks sont suffisants pour que la fili\u00e8re soit approvisionn\u00e9e sans souci jusqu\u2019\u00e0 la prochaine r\u00e9colte.<\/p>\n\n\n\n<p>Les chiffres des ventes de farine sont encourageants, souligne le communiqu\u00e9 de l\u2019association&nbsp;: 29 quintaux de farine de plus qu\u2019en 2020 ont \u00e9t\u00e9 utilis\u00e9s par les boulangers certifi\u00e9s en 2021, soit 3795 qx au total.<\/p>\n\n\n\n<p>Les activit\u00e9s promotionnelles se sont port\u00e9es sur la refonte du site internet et la r\u00e9alisation de sacs \u00e0 pain en tissu. La boulangerie mobile a repris du service, \u00e0 l\u2019occasion de la tenue de la Foire du Valais et du Salon suisse des go\u00fbts et terroirs. Les jeunes consommateurs n\u2019ont pas \u00e9t\u00e9 oubli\u00e9s, avec la d\u00e9couverte du pain de seigle lors du rallye des \u00e9coles de Sion en septembre. Un premier atelier avec des adultes s\u2019est par ailleurs d\u00e9roul\u00e9 \u00e0 l\u2019\u00e9cole d\u2019agriculture dans le cadre de la strat\u00e9gie gastronomie du service de l\u2019agriculture.<\/p>\n\n\n\n<p>Bien que les initiatives anti-phyto aient \u00e9t\u00e9 refus\u00e9es en juin 2021, les attentes des consommateurs sont importantes dans le domaine du respect de l\u2019environnement. Afin de leur montrer que les produits AOP sont des produits de tradition mais que cela n\u2019emp\u00eache pas une prise en compte de ces attentes, l\u2019assembl\u00e9e a fait un pas suppl\u00e9mentaire au niveau environnemental, en ajoutant l\u2019interdiction des herbicides et des traitements de semences aux exigences extenso pour la production des c\u00e9r\u00e9ales, figurant dans le cahier des charges.<\/p>\n\n\n\n<p><strong>Six artisans r\u00e9compens\u00e9s<\/strong><br>L\u2019assembl\u00e9e a distingu\u00e9 les boulangers ayant obtenu les meilleures notes lors de la derni\u00e8re taxation de Pains de seigle valaisan AOP. Il s\u2019agit de : Arnold, Simplon Dorf (99 points \/100), DB Les Artisans, Savi\u00e8se (99 pts), Zenh\u00e4usern Fr\u00e8res, Sion (99 pts), La Goumandine, Riddes (97 pts)&nbsp;; Pessoa \u00e0 Orsi\u00e8res (96 pts)&nbsp;; Jowa, Martigny (96 pts).<\/p>\n\n\n\n<p>En ce qui concerne le projet du Groupe Minoteries de construction d\u2019un moulin \u00e0 Riddes, le pr\u00e9sident Jacques-Roland Coudray a confirm\u00e9 \u00e0 \u00ab&nbsp;Panissimo&nbsp;\u00bb que celui-ci \u00e9tait en cours.
