Professionnels et consommateurs \u00e9valueront des sp\u00e9cialit\u00e9s de boulangerie-confiserie de tout le pays. Ils attribueront des m\u00e9dailles, des prix sp\u00e9ciaux et le titre supr\u00eame de SBT Champion.<\/strong><\/p>\n\n\n\n<p>La 8e \u00e9dition de la taxation nationale de produits de boulangerie-confiserie se d\u00e9roulera dans le cadre de Go\u00fbts et Terroirs. Organisatrice de la manifestation en collaboration avec la BCS et l\u2019\u00e9cole Richemont, l\u2019Association romande des artisans boulangers-p\u00e2tissiers-confiseurs esp\u00e8re d\u00e9passer les 1200 sp\u00e9cialit\u00e9s. Quelque 200 taxateurs les go\u00fbteront et les noteront, durant quatre jours.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-de-l-aspect-au-gout\">De l\u2019aspect au go\u00fbt<\/h2>\n\n\n\n<p>Les organisateurs anonymiseront les produits lors de leur arriv\u00e9e, avant de les envoyer en d\u00e9gustation. Chacune des tables de taxateurs se composera de trois professionnels et deux consommateurs. Les premiers \u00e9valueront six caract\u00e9ristiques (aspect, forme, surface, texture, r\u00e9action en bouche, go\u00fbt), les seconds trois (aspect, r\u00e9action en bouche, go\u00fbt).<\/p>\n\n\n\n<p>Cent points seront \u00e0 prendre au maximum. Le total obtenu d\u00e9terminera le classement du produit afin de savoir s\u2019il m\u00e9ritera une m\u00e9daille d\u2019or, d\u2019argent ou de bronze. Le nombre attribu\u00e9 de m\u00e9dailles par cat\u00e9gorie (boulangerie, p\u00e2tisserie, confiserie, snack-traiteur) sera proportionnel au nombre de produits inscrits dans chaque cat\u00e9gorie.<\/p>\n\n\n\n<p>La sp\u00e9cialit\u00e9 de chaque cat\u00e9gorie qui obtiendra la moyenne la plus \u00e9lev\u00e9e recevra un prix sp\u00e9cial. Un prix cantonal sera attribu\u00e9 \u00e0 la meilleure entreprise de chaque canton. Cette derni\u00e8re devra poss\u00e9der la meilleure moyenne sur les cinq meilleurs produits pr\u00e9sent\u00e9s. Chaque boulangerie-confiserie qui pr\u00e9sentera au moins cinq articles participera au prix SBT Champion 2019-2020. Hormis le prix Bernhard Aebersold qui r\u00e9compensera le produit le plus cr\u00e9atif, les distinctions ne pourront \u00eatre cumul\u00e9es.<\/p>\n\n\n\n<p>La remise des prix aura lieu le dimanche 4 novembre d\u00e8s 14h30.
