Les sp\u00e9cialit\u00e9s de Canonica se sont d\u00e9marqu\u00e9es parmi plus de 1250 produits provenant de 200 artisans. Les taxateurs ont aussi \u00e9lu les champions cantonaux.<\/strong><\/p>\n\n\n\n<p>La 8e \u00e9dition de la taxation nationale des produits de boulangerie-p\u00e2tisserie-confiserie a rendu son verdict, le 4 novembre \u00e0 Bulle (FR). Durant quatre jours, les 300 experts, 180 professionnels et 120 consommateurs, ont analys\u00e9 1251 sp\u00e9cialit\u00e9s. Aspect g\u00e9n\u00e9ral, r\u00e9action en bouche, texture\u2026 Rien ne leur a \u00e9chapp\u00e9. Pour la premi\u00e8re fois, ils ont pu compter sur l\u2019aide de tablettes pour entrer leurs appr\u00e9ciations. Ce syst\u00e8me a passablement simplifi\u00e9 et facilit\u00e9 les taxations, \u00e0 en croire plusieurs experts.<br>Au total, ce ne sont pas moins de 200 boulangers-confiseurs de tous les cantons qui ont pr\u00e9sent\u00e9 des produits au SBT, a soulign\u00e9 Didier Ecoffey, pr\u00e9sident de l\u2019Association romande des artisans boulangers-p\u00e2tissiers-confiseurs ; m\u00eame le Liechtenstein \u00e9tait repr\u00e9sent\u00e9.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-tres-surpris-et-tres-fiers\">\u00ab Tr\u00e8s surpris et tr\u00e8s fiers \u00bb<\/h2>\n\n\n\n<p>Au terme de la fourn\u00e9e 2018, le titre de SBT Champions est revenu \u00e0 Canonica SA \u00e0 Vernier. L\u2019entreprise genevoise a obtenu la meilleure moyenne sur la base de cinq produits. Laurine Sabourin et Samuel Romagn\u00e9 ont d\u00e9clar\u00e9 au micro du ma\u00eetre de c\u00e9r\u00e9monie S\u00e9bastien Rey \u00eatre tr\u00e8s surpris et tr\u00e8s fiers de recevoir cette r\u00e9compense. A pr\u00e9ciser que c\u2019est la troisi\u00e8me fois cons\u00e9cutive que le titre s\u2019en va au bout du L\u00e9man. La boulangerie des Bains, non repr\u00e9sent\u00e9e cette<\/p>\n\n\n\n<p>ann\u00e9e, l\u2019avait emport\u00e9 en 2014 et 2016.<br>Un prix a \u00e9galement \u00e9t\u00e9 adress\u00e9 \u00e0 chacun des produits ayant obtenu la meilleure moyenne dans les quatre cat\u00e9gories. Les laur\u00e9ats sont :<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>pour le produit boulangerie, le \u00ab Feuersteinbrot \u00bb de la boulangerie Krenger \u00e0 Bolligen (BE) ;<\/li><li>pour le produit p\u00e2tisserie, la \u00ab Franchipane mit Himbeer Passion Mousse \u00bb de la p\u00e2tisserie Buchmann \u00e0 M\u00fcnchenstein (BL), et les Bricelets de Gilles Guillaume S\u00e0rl \u00e0 Sugiez (FR) ;<\/li><li>pour le produit confiserie, la Tuile aux amandes de P. Cl\u00e9ment Boulangerie et P\u00e2tisserie S\u00e0rl \u00e0 Daillens (VD) ;<\/li><li>pour le produit snack-traiteur, la Fl\u00fbte \u00e0 l\u2019absinthe, de la boulangerie Donz\u00e9 S\u00e0rl \u00e0 Tramelan (BE).<\/li><\/ul>\n\n\n\n<p>Quant au prix Aebersold qui r\u00e9compense le produit le plus cr\u00e9atif, les jur\u00e9s l\u2019ont attribu\u00e9 au \u00ab Moscato-Heidelbeerschnitte \u00bb de la boulangerie-confiserie Mohn \u00e0 Sulgen (TG). \u00ab Toutes les personnes qui ont eu la chance de conna\u00eetre Bernhard Aebersold savent qu\u2019il s\u2019agit du meilleur prix que l\u2019on peut recevoir \u00bb, a d\u00e9clar\u00e9 Urs Zuberb\u00fchler, responsable de la production.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-pres-de-600-medailles\">Pr\u00e8s de 600 m\u00e9daill\u00e9s<\/h2>\n\n\n\n<p>Les taxations ont \u00e9galement permis \u00e0 584 sp\u00e9cialit\u00e9s (46,68 %) de repartir avec une m\u00e9daille. Pour 131 d\u2019entre elles (10,47 %), il s\u2019agit de l\u2019or, pour 196 (15,67 %) de l\u2019argent et pour 257 (20,54 %) du bronze. Les r\u00e9compenses seront envoy\u00e9es prochainement.
