Leurs pains safran\u00e9s ont obtenu les meilleures moyennes lors de la premi\u00e8re \u00e9valuation.<\/strong><\/p>\n\n\n\n<p>La boulangerie Jean-Luc Delabays S\u00e0rl, \u00e0 Grandvillard, et la Confiserie du Tilleul S\u00e0rl \u00e0 Fribourg ont obtenu les meilleurs r\u00e9sultats lors du premier concours cantonal de la de la Cuchaule : 99 points sur 100. Le troisi\u00e8me prix a \u00e9t\u00e9 d\u00e9cern\u00e9 \u00e0 la boulangerie-confiserie Dubey-Grandjea. L\u2019\u00e9tablissement romontois a totalis\u00e9 96 points.<br>La taxation s\u2019est tenue le mercredi 31 octobre, \u00e0 Go\u00fbts et Terroirs \u00e0 Bulle (FR). Organisatrice, l\u2019Interprofession de la cuchaule AOP a mandat\u00e9 la Confr\u00e9rie fribourgeoise des chevaliers du bon pain. Huit de ses membres ont observ\u00e9, senti, go\u00fbt\u00e9 et not\u00e9 31 produits provenant d\u2019autant de producteurs. \u00ab Ils ne sont pas tous boulangers-p\u00e2tissiers-confiseurs. Il y a \u00e9galement des dames paysannes ou encore l\u2019association le Radeau qui accueille des personnes en difficult\u00e9 \u00bb, a pr\u00e9cis\u00e9 le Grand Ma\u00eetre Claude Zosso. Les producteurs ont deux ans pour se mettre en conformit\u00e9 avec le cahier des charges ; soit jusqu\u2019en mars 2020. Par cons\u00e9quent, cette premi\u00e8re \u00e9dition du concours \u00e9tait \u00e9galement ouverte aux non-certifi\u00e9s. \u00ab Les certifi\u00e9s avaient de ce fait la possibilit\u00e9 de ne pas pr\u00e9senter leurs produits. Par la suite, ce ne sera plus le cas. \u00bb<br>Lors de l\u2019\u00e9valuation, les taxateurs ont tout d\u2019abord not\u00e9 l\u2019\u00e9tat ext\u00e9rieur des produits : forme et volume, couleur et cro\u00fbte, appr\u00eat et coupe. Ils se sont ensuite int\u00e9ress\u00e9s \u00e0 l\u2019int\u00e9rieur : couleur de la mie, sa texture et la r\u00e9action en bouche, odeur, go\u00fbt.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-quinze-diplomes-remis\">Quinze dipl\u00f4mes remis<\/h2>\n\n\n\n<p>Pour r\u00e9ussir l\u2019\u00e9valuation, un total de 78 points, sur 100, \u00e9tait n\u00e9cessaire, dont 48 pour l\u2019int\u00e9rieur de la cuchaule. A Bulle, 26 producteurs ont r\u00e9ussi le test, dont 15 avec une moyenne de 90 points ou plus. A l\u2019avenir, ceux qui n\u2019y parviendraient pas pourraient perdre leur certification.
