Embellissement et optimisation sont quelques-unes des raisons qui ont motiv\u00e9 l\u2019artisan \u00e0 entreprendre les travaux. R\u00e9cit\u2026<\/strong><\/p>\n\n\n\n<p>En septembre de l\u2019ann\u00e9e derni\u00e8re, le boulanger-confiseur David Parrat fermait les portes de son commerce. La r\u00e9novation int\u00e9grale de son magasin et de son tea-room d\u00e9butait. Durant les travaux, son \u00e9quipe a accueilli la client\u00e8le dans une \u00e9choppe provisoire, install\u00e9e dans des containers (panissimo du 27 octobre 2017).<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-valoriser-la-chocolaterie\">Valoriser la chocolaterie<\/h2>\n\n\n\n<p>Le Franc-Montagnard a souhait\u00e9 remettre au go\u00fbt du jour son tea-room. \u00ab Inchang\u00e9 depuis environ quarante ans, il n\u2019\u00e9tait plus du tout attrayant. Il n\u2019\u00e9tait pas \u00e0 la hauteur de nos marchandises. L\u2019\u00e9crin ne correspondait pas du tout au contenu. \u00bb<br>En plus de l\u2019aspect esth\u00e9tique, l\u2019artisan a voulu optimiser les lieux. \u00ab Un corridor s\u00e9parait la boutique et le tea-room. Des habitu\u00e9s nous demandaient encore s\u2019ils avaient le droit de l\u2019emprunter pour se rendre d\u2019un c\u00f4t\u00e9 ou d\u2019un autre. \u00bb Autre exemple avec le coin chocolat : \u00ab Dans notre magasin c\u2019\u00e9tait principalement la boulangerie qui \u00e9tait visible. Or, le cr\u00e9neau qui peut encore se d\u00e9velopper c\u2019est le chocolat. Nous devions donc agrandir et valoriser la chocolaterie. \u00bb<br>A ces motivations s\u2019ajoute une derni\u00e8re, plus secr\u00e8te : \u00ab Cr\u00e9er un nouveau d\u00e9fi. Je suis quelqu\u2019un qui avance au challenge. Je d\u00e9teste faire tout le temps la m\u00eame chose. \u00bb<br>Comme point de d\u00e9part, David Parrat refait un business plan. Il y fixe notamment les objectifs financiers vis\u00e9s et les convertit en surface de pr\u00e9sentation. Via internet et des visites d\u2019entreprise, il collecte une quinzaine d\u2019adresses de concepteurs. Il leur envoie un mail et les convoque tous \u00e0 une s\u00e9ance unique de pr\u00e9sentation. \u00ab Ce n\u2019\u00e9tait pas une mise en concurrence, comme certains ont pu le penser, mais un moyen de gagner du temps. \u00bb Sept font le d\u00e9placement. L\u2019un d\u2019entre eux le met alors en relation avec un architecte lyonnais. Ce dernier lui pr\u00e9sente un avant-projet. Il obtient finalement le mandat. \u00ab Ce qui nous a plu, avec mon \u00e9pouse, c\u2019est que cela nous ressemblait. \u00bb<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-artisanat-authenticite-et-transparence\">Artisanat, authenticit\u00e9 et transparence<\/h2>\n\n\n\n<p>L\u2019am\u00e9nagement reprend la philosophie de l\u2019entreprise : un commerce artisanal, authentique et transparent. La fa\u00e7ade du b\u00e2timent est vitr\u00e9e ; mais pas uniquement. A l\u2019int\u00e9rieur, une partie des coulisses se devine \u00e0 travers plusieurs parois. La plus notable est sans doute celle offrant une vue sur le laboratoire. \u00ab D\u2019une part, elle permet \u00e0 la client\u00e8le de voir que des personnes travaillent, et, d\u2019autre part, mes collaborateurs peuvent constater que des clients ach\u00e8tent leurs cr\u00e9ations. \u00bb<br>Les cloisons entre le magasin et le caf\u00e9 ont disparu ; idem pour l\u2019escalier menant aux toilettes. Ces derniers sont d\u00e9sormais \u00e0 l\u2019\u00e9tage. Boutique et tea-room ont \u00e9t\u00e9 intervertis. \u00ab Cette optimisation a permis de r\u00e9cup\u00e9rer environ 40m2 inutilis\u00e9s. (\u2026) Pour donner plus d\u2019importance \u00e0 nos sp\u00e9cialit\u00e9s, nous avons supprim\u00e9 les produits d\u2019\u00e9picerie. \u00bb L\u2019espace d\u00e9di\u00e9 au chocolat a \u00e9t\u00e9 quadrupl\u00e9, celui du traiteur et de la p\u00e2tisserie augment\u00e9 de 25 %, et les rayonnages de self-picking doubl\u00e9s.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-rouge-orange-violet\">Rouge, orange, violet<\/h2>\n\n\n\n<p>Des murs blancs les mettent en \u00e9vidence et rel\u00e8guent l\u2019architecture au second plan. Des planches de sapin habillent comptoir et plafond. Les lignes ainsi form\u00e9es tendent \u00e0 agrandir l\u2019espace. Elles font aussi \u00e9cho \u00e0 la devanture du commerce sur laquelle des lames de bois dissimulent les surfaces vitr\u00e9es. Une rampe d\u2019escalier m\u00e9tallique apporte \u00e0 l\u2019enveloppe une touche r\u00e9solument moderne, notamment gr\u00e2ce aux d\u00e9coupes rappelant la vocation de l\u2019\u00e9tablissement.<br>Au tea-room, les concepteurs se sont inspir\u00e9s de l\u2019architecte mexicain Luis Barragan et de son utilisation de la couleur. \u00ab Le rouge, l\u2019orange et le violet d\u00e9limitent les espaces en coupant plafond, murs, carrelage et banquettes. H\u00e9sitant au d\u00e9but, j\u2019ai finalement fait confiance \u00e0 l\u2019architecte. \u00bb Le concept a \u00e9t\u00e9 appliqu\u00e9 jusqu\u2019\u00e0 l\u2019office. Dix places suppl\u00e9mentaires ont \u00e9t\u00e9 ajout\u00e9es, soit 40 au total. Pour y parvenir, la terrasse a disparu au profit d\u2019une v\u00e9randa. \u00ab Les clients l\u2019utilisaient uniquement lorsqu\u2019il faisait beau, \u00e0 midi, deux mois par ann\u00e9e. \u00bb<br>Les travaux ont dur\u00e9 pr\u00e8s de douze semaines, pour un montant d\u00e9passant le million de francs. Apr\u00e8s un recul d\u2019environ une ann\u00e9e, David Parrat est satisfait de son choix et convaincu de sa n\u00e9cessit\u00e9. Si les objectifs ne sont pas atteints pour le moment, la fr\u00e9quentation du dimanche a cependant augment\u00e9. \u00ab Ses transformations nous ont en tous les cas permis d\u2019\u00e9viter une baisse du chiffre d\u2019affaires garantie.
