J\u2019aime fl\u00e2ner \u00e0 travers des villes inconnues, traverser des paysages \u00e9trangers, me promener \u00e0 travers des march\u00e9s et renifler des fruits et l\u00e9gumes jamais go\u00fbt\u00e9s.<br>Il est extr\u00eamement enrichissant de faire la connaissance de personnes et d\u2019autres cultures. Le fait de voyager cr\u00e9e de la compr\u00e9hension pour d\u2019autres mani\u00e8res de vivre et de penser. Je n\u2019ai jamais manqu\u00e9 de quoique ce soit, sauf peut-\u00eatre d\u2019un petit pain zurichois qui est si croquant sous la dent.<br>Bien \u00e9videmment il y a la d\u00e9licieuse baguette \u00e0 Paris, le pain plat \u00e9pic\u00e9 \u00e0 Delhi et le kouign amann \u00e0 Roscoff qui est un p\u00e9ch\u00e9. Qu\u2019en est-il d\u2019un simple et v\u00e9ritable pain de seigle ?<br>Il faut longtemps le chercher \u00e0 l\u2019\u00e9tranger, mais pas forc\u00e9ment en vain. Quand j\u2019\u00e9tais il y a quelques ann\u00e9es au \u00ab Pain Quotidien \u00bb \u00e0 New York, je retrouvais de mani\u00e8re inattendue l\u2019odeur d\u2019une boulangerie famili\u00e8re. Alain Coumont, un jeune cuisinier belge a prouv\u00e9 qu\u2019il \u00e9tait possible de s\u2019imposer gr\u00e2ce \u00e0 la qualit\u00e9 artisanale contre le designfood styl\u00e9. Comme il ne trouvait pas de bon pain pour son restaurant, il a rapidement ouvert sa propre boulangerie. Aujourd\u2019hui il dirige 220 boulangeries-restaurants \u00ab Pain Quotidien \u00bb dans 19 pays. C\u2019est le r\u00e9sultat du courage, de l\u2019esprit d\u2019entreprise et de l\u2019esprit novateur. Bien \u00e9videmment, le pain y est plus cher que dans le supermarch\u00e9. Mais comme le dit Sarah Wiener, la star gastronomique de Hambourg : \u00ab Bien manger est la plus belle mani\u00e8re de sauver le monde. \u00bb<\/p>\n\n\n\n<p>Ruedi Christen est journaliste et auteur.
