Il s\u2019est ensuivi un engouement sans pr\u00e9c\u00e9dent.<\/strong><\/p>\n\n\n\n<p>Le boulanger-p\u00e2tissier bernois Stephan Krenger a particip\u00e9 \u00e0 plusieurs reprises au SBT \u00e0 Bulle (FR) ; comme en t\u00e9moignent ses diff\u00e9rentes m\u00e9dailles dans son commerce. Lors de la derni\u00e8re \u00e9dition cet automne, le jury a attribu\u00e9 le prix du meilleur produit de boulangerie \u00e0 son pain : le \u00ab Feuersteinbrot \u00bb. Il \u00e9tait \u00e9vident pour l\u2019artisan de Bolligen de promouvoir cette distinction ; mais pas durant les mois de novembre et d\u00e9cembre. Il a tout mis en place pour le mettre en valeur au d\u00e9but de l\u2019ann\u00e9e. En janvier, sa sp\u00e9cialit\u00e9 devait \u00eatre vendue en tant que pain du mois. Les vitrines devaient \u00eatre d\u00e9cor\u00e9es en cons\u00e9quence. Les choses ont toutefois pris un autre tournant\u2026<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-buzz-mediatique\">Buzz m\u00e9diatique<\/h2>\n\n\n\n<p>Peu avant No\u00ebl, des personnes de l\u2019\u00e9mission \u00ab 10vor10 \u00bb ont contact\u00e9 Stephan Krenger. Elles ont re\u00e7u l\u2019info de Michael Kleinert qui a r\u00e9cemment publi\u00e9 le livre \u00ab Die Sprache des Brotes \u00bb. Le site internet r\u00e9gional Bern-Ost a publi\u00e9 \u00e0 la mi-janvier un article sur la boulangerie-p\u00e2tisserie bernoise, et plus particuli\u00e8rement sur son \u00ab Feuersteinbrot \u00bb. Il \u00e9tait mentionn\u00e9 que les clients se l\u2019arrachaient. M\u00eame constat, un jour plus tard, du c\u00f4t\u00e9 de \u00ab 20 Minuten \u00bb. C\u2019est all\u00e9 vite. Le pain \u00e9tait en rupture de stock en un rien de temps. Sur les coups de 10 -11 heures, il \u00e9tait indisponible.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-demandes-de-toute-la-suisse\">Demandes de toute la Suisse<\/h2>\n\n\n\n<p>Jusqu\u2019\u00e0 cet engouement m\u00e9diatique, le commerce vendait environ quinze pains par semaine. Sa production \u00e9tait hebdomadaire. Aujourd\u2019hui, jusqu\u2019\u00e0 cinquante ventes sont faites par jour. Quant \u00e0 la fabrication, elle est quasiment quotidienne.<br>Les demandes affluent de Suisse enti\u00e8re. Stephan Krenger a rapidement abandonn\u00e9 l\u2019id\u00e9e d\u2019envoyer du pain par la poste : trop on\u00e9reux. Cette course au \u00ab Feuersteinbrot \u00bb n\u2019a aucune cons\u00e9quence pour le personnel. \u00ab Comme nous confectionnons la p\u00e2te au moins un jour \u00e0 l\u2019avance, cela s\u2019int\u00e8gre tr\u00e8s bien dans le processus de production \u00bb, explique M.
