Il a travaill\u00e9 comme chef p\u00e2tissier \u00e0 l\u2019H\u00f4tel de ville de Crissier durant plus de six ans. L\u2019\u00e9tablissement est class\u00e9 comme l\u2019un des meilleurs restaurants du monde. Depuis son arriv\u00e9e, il a d\u00e9j\u00e0 mis en vente quatre nouvelles p\u00e2tisseries\u2009: la Charlotte \u00e0 la poire, un entremets chocolat caf\u00e9, le Saint-Honor\u00e9 ainsi que l\u2019\u00e9clair au chocolat. Il a aussi commenc\u00e9 \u00e0 faire des chouquettes. Je suis content de travailler avec un p\u00e2tissier comme lui car je sais que j\u2019en apprendrai encore davantage tous les jours. D\u00e9sormais, je travaille parfois avec M.\u202fJaquet pour la p\u00e2tisserie. Je passerai aussi du temps avec M.\u202fWyss pour la chocolaterie.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-ma-visite-a-la-fbk\">Ma visite \u00e0 la FBK<\/h2>\n\n\n\n<p>Le lundi 18 mars, je me suis rendu \u00e0 la FBK, \u00e0 Bernexpo de 10 \u00e0 16\u202fheures environ. J\u2019\u00e9tais accompagn\u00e9 de mes deux patrons ainsi que de mon nouveau chef p\u00e2tissier. J\u2019ai pass\u00e9 une excellente journ\u00e9e en allant de stand en stand\u2009: machines \u00e0 chocolat, \u00e0 p\u00e2tisserie, pour le fa\u00e7onnage, etc. Nous avons \u00e9t\u00e9 accueillis par plusieurs d\u2019entre eux, notamment un o\u00f9 j\u2019ai bu un excellent chocolat chaud et o\u00f9 j\u2019ai d\u00e9gust\u00e9 une panoplie de chocolats au lait, noirs et blancs. Mes employeurs ont m\u00eame \u00e9t\u00e9 interview\u00e9s sur la mani\u00e8re de confectionner leurs produits et leurs pains r\u00e9volutionnaires gr\u00e2ce \u00e0 la farine biodynamique du meunier \u00e0 Suchy (VD).<br>Cette journ\u00e9e m\u2019a aussi permis de renforcer les liens avec mes coll\u00e8gues. J\u2019estime tr\u00e8s important de travailler dans une bonne ambiance tout en rigolant. Je garde un tr\u00e8s bon souvenir de la FBK.
