Qu\u2019y trouvez-vous de si fascinant\u2009?<\/strong><br>Ce qui me fascine, c\u2019est que l\u2019on puisse rendre les gens heureux avec de tout petits riens. C\u2019est tr\u00e8s agr\u00e9able de faire partie de la vie des clients pour leur plus beau jour. Au cours des entretiens pr\u00e9alables, on apprend des choses sur leur vie. Pour certains, c\u2019est la premi\u00e8re tourte de mariage et d\u2019autres ont d\u00e9j\u00e0 v\u00e9cu ce joyeux \u00e9v\u00e9nement \u00e0 plusieurs reprises. Les tourtes de mariage demandent \u00e9norm\u00e9ment de temps. Parall\u00e8lement, elles refl\u00e8tent tout notre artisanat\u2009: produits de boulangerie, tourtes et d\u00e9corations. Un de nos mandats de la fin mai est par exemple une tourte enti\u00e8rement argent\u00e9e et d\u00e9cor\u00e9e de roses extr\u00eamement pr\u00e9cieuses devant avoir \u00e0 100\u202f% l\u2019apparence de vraies roses. Il nous faut au moins 20\u202fminutes pour fabriquer chaque fleur.<\/p>\n\n\n\n<p><strong>Les tourtes de mariage constituent-elles votre activit\u00e9 principale\u2009?<\/strong><br>Non, ce n\u2019est pas notre activit\u00e9 principale. Nous sommes un tea-room et proposons du caf\u00e9, des g\u00e2teaux, des glaces et des pralin\u00e9s. Etant donn\u00e9 que nous sommes bien \u00e9quip\u00e9s, les coll\u00e8gues qui n\u2019ont plus envie de fabriquer des tourtes de mariage ou ne sont pas suffisamment \u00e9quip\u00e9s envoient leurs clients chez nous, notamment pour les tourtes complexes.<br>Cette ann\u00e9e, par exemple, nous avons fabriqu\u00e9 la seconde tourte aux fraises enti\u00e8rement dor\u00e9e. La cliente souhaitait imp\u00e9rativement des fraises dor\u00e9es. Nous avons donc dor\u00e9 chaque fraise individuellement. Nous ne reculons devant rien. C\u2019est le client qui d\u00e9cide, selon ce qu\u2019il est pr\u00eat \u00e0 payer, et nous essayons ensemble de trouver la meilleure solution.<\/p>\n\n\n\n<p><strong>Quel genre de tourte de mariage est le plus courant\u2009? Quelles sont les tendances les plus r\u00e9centes\u2009?<\/strong><br>Actuellement, c\u2019est le \u00ab\u2009Naked Cake\u2009\u00bb, \u00ab\u2009d\u00e9nud\u00e9\u2009\u00bb. La tourte n\u2019est pas parfaitement peinte comme nous y sommes habitu\u00e9s en p\u00e2tisserie. Les fonds sont encore visibles. Ceci pla\u00eet beaucoup aux h\u00f4tes. Par ailleurs, la tourte de mariage glac\u00e9e est un produit qui marche tr\u00e8s bien. De nos jours, 80\u202f% des tourtes de mariage sont consomm\u00e9es le soir, non plus pendant la journ\u00e9e comme c\u2019\u00e9tait le cas autrefois. \u00c0 10 heures du soir, une tourte peut \u00eatre difficile \u00e0 dig\u00e9rer. La tourte glac\u00e9e aux fruits frais repr\u00e9sente une alternative id\u00e9ale.<\/p>\n\n\n\n<p><strong>Est-il important dans votre branche de suivre toujours les tendances\u2009?<\/strong><br>Oui, nous sommes des prestataires de services. Si le client a un d\u00e9sir, mon r\u00f4le est d\u2019y r\u00e9pondre. Je peux naturellement essayer d\u2019imposer mon style, mon art ou mon rationalisme et mes exigences mais au final c\u2019est le client qui paie pour ma prestation, autrement dit pour ce qui lui fait plaisir.<\/p>\n\n\n\n<p><strong>Quel conseil donneriez-vous aux novices dans la branche\u2009?<\/strong><br>Le plus important est de pr\u00eater attention \u00e0 la statique lors de la production.
