Je leur ai confectionn\u00e9 des burgers enti\u00e8rement faits maison\u2009: du pain jusqu\u2019\u00e0 la sauce.<br>Cet \u00e9t\u00e9, nous avons eu l\u2019honneur et la chance de manger \u00e0 l\u2019h\u00f4tel-restaurant Maison Wenger, au Noirmont dans le canton du Jura. Accompagn\u00e9 de sa femme Ana\u00eblle Roze, le chef J\u00e9r\u00e9my Desbraux a repris ce restaurant. Ancien cuisinier du fameux H\u00f4tel de ville de Crissier (VD), il vise les trois \u00e9toiles Michelin. C\u2019est aussi un ami de mes employeurs et de mon chef p\u00e2tissier M. Jacquet.<br>C\u2019\u00e9tait ma premi\u00e8re occasion de manger dans un restaurant gastronomique. Et, pour \u00eatre franc je n\u2019ai pas \u00e9t\u00e9 d\u00e9\u00e7u\u2009! En guise d\u2019amuse-bouches, nous avons eu droit aux mignardises\u2009: un caviar d\u2019aubergine, une autre \u00e0 l\u2019orange<br>et \u00e0 la carotte, une derni\u00e8re au foie gras. En entr\u00e9e, nous avons eu du saumon, des chanterelles safran\u00e9es. Puis est venu le plat que j\u2019ai pr\u00e9f\u00e9r\u00e9\u2009: un filet de rouget croustillant condiment\u00e9 \u00e0 la fleur de c\u00e2pre et persil \u00ab\u2009fa\u00e7on grenobloise\u2009\u00bb. Pourtant, d\u2019ordinaire, je n\u2019appr\u00e9cie pas trop le poisson. En plat de r\u00e9sistance, j\u2019ai d\u00e9couvert le pigeon r\u00f4ti et effiloch\u00e9 avec un chutney de cerise burlat au vinaigre maison. J\u2019ai finalement d\u00e9gust\u00e9 un assortiment de fromages et deux desserts. Le premier \u00e9tait \u00e0 pistache bergamote et le second \u00e0 la fraise mara des bois avec un sorbet rehauss\u00e9 \u00e0 la lime. C\u2019\u00e9tait une tr\u00e8s belle exp\u00e9rience qui restera certainement grav\u00e9e dans ma m\u00e9moire.<br>La f\u00eate au lac \u00e0 Yverdon-les-Bains (VD) s\u2019est d\u00e9roul\u00e9e du 22 au 23\u202fjuin. Mes ma\u00eetres d\u2019apprentissage en ont profit\u00e9 pour m\u2019envoyer vendre nos glaces artisanales avec leur triporteur, le v\u00e9lo qui \u00ab\u2009repr\u00e9sente\u2009\u00bb Gerber &amp; Wyss. J\u2019ai d\u00fb p\u00e9daler sur ce v\u00e9lo rempli de glace au bord des rives du lac. M\u00eame si je n\u2019ai pas l\u2019habitude, j\u2019ai beaucoup appr\u00e9ci\u00e9 d\u2019avoir un contact direct avec le client.
