Gagner une pr\u00e9s\u00e9lection te permettant de repr\u00e9senter ton pays lors d\u2019un concours est une grande satisfaction. Je pense que j\u2019ai vraiment fait du bon travail, notamment parce que, contrairement \u00e0 quelques-uns de mes coll\u00e8gues, je ne produis des panettones que pendant la p\u00e9riode de No\u00ebl. Le concours se d\u00e9roule par ailleurs \u00e0 Lugano, ville dans laquelle se trouve ma boulangerie-p\u00e2tisserie.<\/p>\n\n\n\n<p><em><strong>B.\u202fB.\u2009:<\/strong><\/em><br>J\u2019ai suivi la recommandation de mon fr\u00e8re (copropri\u00e9taire de l\u2019entreprise).<\/p>\n\n\n\n<p><em><strong>M.\u202fM.:<\/strong><\/em><br>Apr\u00e8s 30 ans d\u2019exp\u00e9rience et de d\u00e9veloppement, je veux savoir quel niveau a atteint mon panettone, en le soumettant \u00e0 un jury international.<\/p>\n\n\n\n<p><strong><em>L.\u202fP.\u2009:<\/em><\/strong><br>Je souhaite comprendre quel est notre niveau de qualit\u00e9 dans un contexte plus large, l\u2019objectif \u00e9tant de continuer \u00e0 nous am\u00e9liorer.<\/p>\n\n\n\n<p><strong>Comment votre produit pourrait-il encore \u00eatre am\u00e9lior\u00e9\u2009?<\/strong><\/p>\n\n\n\n<p><em><strong>R.\u202fG.\u2009:<\/strong><\/em><br>Je n\u2019ai trouv\u00e9 ni points faibles ni points parfaits sur le formulaire d\u2019\u00e9valuation de mon panettone. D\u2019apr\u00e8s ce que je peux en juger, tout a \u00e9t\u00e9 \u00e9valu\u00e9 de fa\u00e7on homog\u00e8ne. Pour pouvoir remporter la coupe, on va donc essayer d\u2019am\u00e9liorer un peu le tout en vue de pr\u00e9senter un produit presque parfait. Et ce ne sera certainement pas facile \u00e0 r\u00e9aliser.<\/p>\n\n\n\n<p><em><strong>B.\u202fB.\u2009:<\/strong><\/em><br>Il faut accorder une attention particuli\u00e8re \u00e0 la cuisson. Le conseil donn\u00e9 par le pr\u00e9sident de l\u2019association des boulangers de Milan, Matteo Cunsolo, lors de la proc\u00e9dure de s\u00e9lection nationale est bon \u2013 voir panissimo n\u00b0\u202f12 \u2013, la cuisson ne doit pas \u00eatre trop courte. L\u2019acidit\u00e9 risque sinon de ne pas avoir le temps de s\u2019estomper.<\/p>\n\n\n\n<p><em><strong>M.\u202fM.:<\/strong><\/em><br>En tenant compte au mieux du moindre d\u00e9tail.<\/p>\n\n\n\n<p><em><strong>L.\u202fP.\u2009:<\/strong><\/em><br>Je pense qu\u2019on peut apporter quelques am\u00e9liorations \u00e0 tous les niveaux \u2013 ind\u00e9pendamment du concours, je suis toujours \u00e0 la recherche des meilleurs ingr\u00e9dients et de possibilit\u00e9s d\u2019optimisation du processus de production.<\/p>\n\n\n\n<p><br><strong>Depuis combien d\u2019ann\u00e9es fabriquez-vous du panettone\u2009?<\/strong><\/p>\n\n\n\n<p><em><strong>R.\u202fG.\u2009:<\/strong><\/em><br>Depuis pr\u00e8s de 15 ans.<\/p>\n\n\n\n<p><strong><em>B.\u202fB.\u2009:<\/em><\/strong><br>Depuis presque 30 ans.<\/p>\n\n\n\n<p><em><strong>M.\u202fM.:<\/strong><\/em><br>Depuis 30 ans.<\/p>\n\n\n\n<p><em><strong>L.\u202fP.\u2009:<\/strong><\/em><br>On produit du panettone depuis le d\u00e9but des ann\u00e9es 70 au sein de l\u2019entreprise, moi personnellement, je le fais depuis environ 30 ans.<br>&nbsp;<\/p>\n\n\n\n<p><strong>Novembre approche. Comment pr\u00e9voyez-vous d\u2019exploiter au mieux la p\u00e9riode de pr\u00e9paration\u2009?<\/strong><\/p>\n\n\n\n<p><strong><em>R.\u202fG.\u2009:<\/em><\/strong><br>S\u2019il s\u2019agissait de d\u00e9corer un g\u00e2teau, on pourrait s\u2019entra\u00eener chaque jour, jusqu\u2019\u00e0 pouvoir le faire les yeux ferm\u00e9s. Mais ce n\u2019est pas possible avec le panettone. Ceux qui le produisent toute l\u2019ann\u00e9e vont certainement profiter de cette opportunit\u00e9 pour am\u00e9liorer leur produit. Je ne vais malheureu-sement pas pouvoir le faire. Je vais n\u00e9anmoins faire une recherche approfondie sur tous les ingr\u00e9dients \u00e0 utiliser, et aussi tenir compte des conseils de mes collaborateurs, amis et coll\u00e8gues. Sa production n\u00e9cessite beaucoup de temps, de comp\u00e9tences et de passion. Lorsque vous le cuisez, vous avez dans les mains un excellent produit qui emplit les locaux de production de son parfum typique. La satisfaction est vraiment grande.<\/p>\n\n\n\n<p><strong><em>B.\u202fB.\u2009:<\/em><\/strong><br>Le panettone est empreint de la personnalit\u00e9 de celui qui le confectionne. L\u2019artisan, qui adore son m\u00e9tier, parvient \u00e0 fabriquer un excellent produit en essayant toujours de l\u2019optimiser. Sa recette est une magnifique chanson pour un chanteur.<\/p>\n\n\n\n<p><em><strong>M.\u202fM.:<\/strong><\/em><br>Le panettone est assur\u00e9ment le doux symbole de No\u00ebl, mais en Suisse, au Tessin notamment, il est appr\u00e9ci\u00e9 toute l\u2019ann\u00e9e.
