Il se passe quelque chose dans la population en mati\u00e8re de nourriture. Les inqui\u00e9tudes sont l\u00e0, mais aussi la volont\u00e9 de r\u00e9sister devant l\u2019industrialisation du contenu de nos assiettes.<br>Pour la premi\u00e8re fois, le pain, le pain artisanal, le pain maison a \u00e9t\u00e9 au c\u0153ur des \u00e9v\u00e9nements. Le magazine \u00ab\u2009gout.ch\u2009\u00bb a consacr\u00e9 pr\u00e8s du tiers de son contenu \u00e0 ce produit symbolique simple et naturel.<br>Il faut dire qu\u2019il y avait urgence d\u2019une prise de conscience aussi bien dans la population que chez les cuisiniers.<br>La plupart des pains que nous mangeons sont le r\u00e9sultat d\u2019une standardisation dangereuse pour le go\u00fbt et la sant\u00e9. L\u2019industrialisation du pain s\u2019est acc\u00e9l\u00e9r\u00e9e sous la pression des grands moulins et des nouvelles cha\u00eenes de boulangeries mondialis\u00e9es.<br>Lors de cette Semaine du go\u00fbt, nous avons rencontr\u00e9 des meuniers, des artisans boulangers, des agriculteurs qui r\u00e9sistent \u00e0 cette concentration du monde du pain. La diversit\u00e9, il faut la pr\u00e9server et aussi la d\u00e9mocratiser. Quel futur pour nos enfants\u2009? Certains auront droit \u00e0 un pain haut de gamme et les autres devront ingurgiter ce que les grands groupes industriels leur auront pr\u00e9par\u00e9\u2009?<br>Si nos enfants apprenaient le go\u00fbt d\u00e8s le plus jeune \u00e2ge \u00e0 l\u2019\u00e9cole, ils sauraient tout sur les manipulations des farines, les additifs, la teneur et le dosage du gluten.<br>C\u2019est notre devoir de mangeurs exigeant que de d\u00e9fendre le bienmanger.
