Quatre boulangers-p\u00e2tissiers tessinois repr\u00e9sentent la Suisse.<\/strong><\/p>\n\n\n\n<p>La conf\u00e9rence de presse sur la premi\u00e8re Coupe du monde du panettone de Lugano, la \u00ab\u2009Coppa del Mondo del Panettone\u2009\u00bb, a eu lieu symboliquement au sommet du Monte del San Salvatore. Les organisateurs, l\u2018association cantonale tessinoise des boulangers-confiseurs (SMPPC) et \u00e0 leur t\u00eate l\u2019instigateur du concours, Giuseppe Piffaretti, sont pr\u00eats \u00e0 accueillir les participants et les visiteurs.<\/p>\n\n\n\n<p><strong>Les finalistes suisses<\/strong><br>Quatre boulangers-p\u00e2tissiers tessinois se sont qualifi\u00e9s pour la finale en juin lors de la s\u00e9lection suisse\u2009: Roberto Gatti (Lugano), Bruno Buletti (Airolo), Marzio Monaco (Losone) et Luca Poncini (Maggia). Les autres participants viennent d\u2019Italie, d\u2018Espagne, du Portugal, des Etats-Unis, d\u2019Australie et du Japon. Une seule femme a r\u00e9ussi \u00e0 se hisser en finale\u2009: l\u2019Australienne Tatiana Coluccio.<\/p>\n\n\n\n<p><strong>Le jury<\/strong><br>Le pr\u00e9sident du jury est le p\u00e2tissier fran\u00e7ais Gabriel Paillasson. Il est le fondateur de la Coupe du monde de la p\u00e2tisserie. Les autres membres sont\u2009: Paco Torreblanca, p\u00e2tissier novateur\u2009; Gianbattista Montanari, sp\u00e9cialiste de p\u00e2tisserie en mati\u00e8re de levure et auteur de livres. Il a remport\u00e9 en 2016 le prix du meilleur livre professionnel de p\u00e2tisserie au monde. Carlo Gronchi, expert italien en sciences alimentaires\u2009; Fabrizio Galla, p\u00e2tissier AMPI et laur\u00e9at du prix du \u00ab\u2009best chocolate cake in the world\u2009\u00bb \u00e0 Lyon en 2007\u2009; Marco Molinari qui vit depuis 1998 au Japon, o\u00f9 il travaille en tant que professeur universitaire et enseignant en cuisine et cuisson, et a \u00e9t\u00e9 d\u00e9sign\u00e9 meilleur cuisinier et p\u00e2tissier d\u2019Asie en 2018\u2009; Massimo Turuani, pr\u00e9sident des boulangers-confiseurs tessinois (SMPPC)\u2009; Piero Tenca, fondateur et pr\u00e9sident de l\u2019Association suisse des sommeliers professionnels (ASSP) et secr\u00e9taire g\u00e9n\u00e9ral adjoint de l\u2019 \u00ab\u2009Associazione mondiale dei sommeliers\u2009\u00bb.<\/p>\n\n\n\n<p><strong>Le comit\u00e9 technique<\/strong><br>Le comit\u00e9 technique est compos\u00e9 de plusieurs p\u00e2tissiers\u2009: Jos\u00e8 Romero (Espagne), Pierpaolo Magni (Italie), Angelo Musolino (Italie), Andrea Besuschio (Italie), Beniamino Bazzoli (Italie), Gianluigi Marina (Suisse), Vito et Daniel Ricigliano (Suisse), Luca Danesi (Suisse), Mattia Gorietti (Suisse), Alain Philipona (Suisse) et la secr\u00e9taire de la SMPPC, Sandra Fogato.<\/p>\n\n\n\n<p><strong>\u00ab\u2009Sauveur\u2009\u00bb de bilan<\/strong><br>Lors de la conf\u00e9rence de presse, le pr\u00e9sident de la SMPPC, Massimo Turuani, a rappel\u00e9 que le panettone avait d\u00e9j\u00e0 sauv\u00e9 plus d\u2019un bilan d\u2019entreprise. Produit consomm\u00e9 essentiellement en fin d\u2019ann\u00e9e, il permet en effet de combler les lacunes financi\u00e8res apparaissant en cours d\u2019exercice.<br>Giuseppe Piffaretti a fait remarquer qu\u2019on produisait au Tessin du \u00ab\u2009panettone d\u2019eccellenza\u2009\u00bb, gr\u00e2ce notamment au \u00ab\u2009Marchio garanzia di qualit\u00e0 SMPPC\u2009\u00bb (label de qualit\u00e9 de la SMPPC). Il a \u00e9galement avou\u00e9 esp\u00e9rer qu\u2019un des quatre finalistes suisses termine sur le podium.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-le-programme\">Le programme<\/h2>\n\n\n\n<p><strong>vendredi 8\u202fnovembre\u2009:<\/strong>&nbsp;12 h., ouverture\u2009; d\u00e8s 15 h., d\u00e9but de la manifestation avec notamment le concours de d\u00e9coration de panettone pour apprentis, Panettone 4Kids, la pr\u00e9sentation d\u2019une s\u00e9lection de panettones du concours, des d\u00e9gustations et diff\u00e9rents autres \u00e9v\u00e8nements. Fermeture des portes \u00e0 20 h.<\/p>\n\n\n\n<p><strong>samedi 9\u202fnovembre\u2009:<\/strong>&nbsp;10 h., ouverture\u2009; d\u00e8s 12 h., d\u00e9but de la manifestation avec la pr\u00e9sentation d\u2019une s\u00e9lection de panettones du concours, Panettone 4Kids, divers \u00e9v\u00e8nements parall\u00e8les. 17 h., remise des prix du concours de d\u00e9coration de panettone pour apprentis. Fermeture des portes \u00e0 20 h.<\/p>\n\n\n\n<p><strong>dimanche 10\u202fnovembre\u2009:&nbsp;<\/strong>10 h., ouverture\u2009; 10 h. 30, d\u00e9but de la manifestation avec la pr\u00e9sentation d\u2019une s\u00e9lection de panettones du concours, Panettone 4Kids et divers \u00e9v\u00e8nements parall\u00e8les. 16 h., d\u00e9signation du \u00ab\u2009Maestro del Panettone 2019\u2009\u00bb. 17 h., remise des prix de la \u00ab\u2009Coppa del Mondo del Panettone\u2009\u00bb.<br>Un panettone g\u00e9ant en bois et de nombreux stands de partenaires et d\u2019entreprises cantonales membres seront pr\u00e9sents les trois jours au parc des expositions.
