Un cash-flow peut g\u00e9n\u00e9ralement \u00eatre consid\u00e9r\u00e9 comme bon entre 5\u202f% et 7\u202f% et comme excellent au-del\u00e0 de 10\u202f%.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-boulangeries-confiseries-avec-et-sans-filiales-amelioration\">Boulangeries-confiseries avec et sans filiales\u2009: am\u00e9lioration<\/h2>\n\n\n\n<p>Au cours des cinq derni\u00e8res ann\u00e9es, le cash-flow des boulangeries et confiseries classiques et de celles avec filiales s\u2019est am\u00e9lior\u00e9, respectivement, de 1,0\u202f% et de 2,8\u202f%. Repr\u00e9sentant d\u00e8s lors 5,8\u202f% et 5,5\u202f% du chiffre d\u2019affaires, cette valeur peut \u00eatre consid\u00e9r\u00e9e comme satisfaisante. Le revenu permet donc de r\u00e9aliser les investissements n\u00e9cessaires pour la production et la vente.<br>Le cash-flow des boulangeries-confiseries avec caf\u00e9 s\u2019est aussi am\u00e9lior\u00e9 constamment. Il se situe \u00e0 7,8\u202f%, ce qui est \u00e9galement un niveau satisfaisant. Un meilleur cash-flow est aussi n\u00e9cessaire ici, vu les investissements plus importants dans les entreprises avec une partie restauration, de mani\u00e8re \u00e0 pouvoir supporter les amortissements additionnels pour le caf\u00e9 et la cuisine.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-boulangeries-confiseries-avec-marchandises-pas-suffisant\">Boulangeries-confiseries avec marchandises\u2009: pas suffisant<\/h2>\n\n\n\n<p>Les boulangeries-confiseries avec une grande part de marchandises restent un sujet de pr\u00e9occupation, Bien qu\u2019elles aient pu am\u00e9liorer l\u00e9g\u00e8rement la situation du revenu, la valeur obtenue de 0,8\u202f% doit \u00eatre qualifi\u00e9e de totalement insuffisante.
