Le p\u00e2tissier Gianluca Mollo \u00e9voque ci-apr\u00e8s sa grande passion : son m\u00e9tier.<\/strong><\/p>\n\n\n\n<p>Gianluca Mollo produit ses panettones avec un levain chef qu\u2019il nourrit depuis qu\u2019il est enfant.<br><br>Quand on me demande ce qui me pla\u00eet dans mon travail, je r\u00e9ponds toujours\u2009: avant tout la cr\u00e9ativit\u00e9. Je suis heureux de pouvoir cr\u00e9er de d\u00e9licieux produits d\u2019exception b\u00e9n\u00e9fiques pour les consommateurs. J\u2019appr\u00e9cie aussi de pouvoir leur donner un bon sentiment<\/p>\n\n\n\n<p>\u00ab\u2009La satisfaction des attentes du client qui a command\u00e9 le dessert est fondamentale.\u2009\u00bb<br><br>avec des ingr\u00e9dients simples\u2009: des \u0153ufs, du sucre, du beurre et de la farine.<\/p>\n\n\n\n<p>Deux \u00e9l\u00e9ments sont absolument indispensables dans le travail d\u2019un p\u00e2tissier\u2009: d\u2019excellentes mati\u00e8res premi\u00e8res et beaucoup de passion. Chaque fois que je pr\u00e9pare un dessert, je pense au client qui m\u2019a choisi pour c\u00e9l\u00e9brer un \u00e9v\u00e8nement ou tout simplement terminer un repas en se faisant plaisir et en surprenant ses invit\u00e9s. La satisfaction des attentes du client qui a command\u00e9 le dessert est fondamentale.<\/p>\n\n\n\n<p>\u00ab\u2009On peut cr\u00e9er un excellent produit avec de l\u2019exp\u00e9rience, de l\u2019amour et des mati\u00e8res premi\u00e8res de qualit\u00e9.\u2009\u00bb<br><br>Il faut donc un engagement maximal. Je crois qu\u2019on peut cr\u00e9er un excellent produit avec de l\u2019exp\u00e9rience, de l\u2019amour et des mati\u00e8res premi\u00e8res de qualit\u00e9. Il doit aussi avoir l\u2019air bon\u2009; on mange d\u2019abord avec les yeux. Il doit aussi et surtout s\u00e9duire par son go\u00fbt et son parfum. La premi\u00e8re d\u00e9gustation doit \u00eatre une agr\u00e9able sensation et une belle exp\u00e9rience. C\u2019est le secret d\u2019un produit vraiment excellent.<br>Au moment de couper un g\u00e2teau confectionn\u00e9 par mes soins ou de faire d\u00e9guster un dessert, il m\u2019arrive presque tout le temps de me tenir un peu \u00e0 l\u2019\u00e9cart pour observer les r\u00e9actions des gens\u2009; notamment lorsque je fais partie des invit\u00e9s. J\u2019essaie de comprendre ce qu\u2019ils pensent en \u00e9tudiant leurs regards ou leurs l\u00e8vres.<\/p>\n\n\n\n<p>\u00ab\u2009J\u2019ai confectionn\u00e9 mon premier dessert \u00e0 l\u2019\u00e2ge de cinq ans.\u2009\u00bb<br><br>Le moment o\u00f9 le g\u00e2teau arrive dans la bouche en dit plus que mille mots. Je suis tr\u00e8s fier de ma client\u00e8le qui continue \u00e0 me faire confiance et \u00e0 me conseiller.<\/p>\n\n\n\n<p>J\u2019ai confectionn\u00e9 mon premier dessert \u00e0 l\u2019\u00e2ge de cinq ans. Je m\u2019enfermais toujours dans ma chambre pour pouvoir exp\u00e9rimenter sans \u00eatre d\u00e9couvert. Ma m\u00e8re avait un livre de recettes que je feuilletais chaque jour, et les rubriques des desserts \u00e9taient les plus utilis\u00e9es. Je ne savais pas encore lire, mais il y avait des photos pr\u00e9sentant toutes les \u00e9tapes des recettes. J\u2019ai donc concoct\u00e9 un panier avec une orange, et ajout\u00e9 des biscuits \u00e9miett\u00e9s, un peu de chocolat, de la salade de fruits et de la cr\u00e8me fouett\u00e9e.
