Marco Berwert, de Stalden (OW), est impliqu\u00e9 dans cette campagne depuis le d\u00e9but.Marco Berwert plonge sa main dans un sac de farine, en saupoudre une poign\u00e9e sur la table en bois de sa boulangerie, y dessine un grain de bl\u00e9 avec son doigt et commence \u00e0 raconter. A partir des composants du grain, il explique les types de farine, de p\u00e2tes et de pains. Ses yeux brillent. \u00ab\u2009La mie est un peu plus compacte dans le pain \u2039 Schwander \u203a, mais celui-ci reste frais tr\u00e8s longtemps\u2009\u00bb, dit-il \u00e0 propos de la recette qu\u2019il a lui-m\u00eame cr\u00e9\u00e9e. Le boulanger est la quatri\u00e8me g\u00e9n\u00e9ration \u00e0 diriger l\u2019entreprise. Depuis pr\u00e8s de 130 ans, le commerce approvisionne les habitants de Stalden et des environs en produits de boulangerie frais.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-des-ingredients-naturels-et-locaux\">Des ingr\u00e9dients naturels et locaux<\/h2>\n\n\n\n<p>Marco Berwert et son \u00e9quipe se trouvent sur un march\u00e9 tr\u00e8s comp\u00e9titif. \u00ab\u2009La pression de l\u2019industrie est \u00e9norme et le respect des aliments (de ce qui et de qui est derri\u00e8re ceux-ci) a malheureusement \u00e9t\u00e9 quelque peu perdu\u2009\u00bb, regrette-t-il. Le label d\u2019IP-Suisse Naturel lui permet de se d\u00e9marquer et refl\u00e8te sa position\u2009: \u00ab\u2009Je dois m\u2019engager pour ce que je fais\u2009\u00bb.<br>Naturel signifie ne pas utiliser d\u2019additifs artificiels. Cela demande une grande sensibilit\u00e9 pour le m\u00e9tier. En outre, Naturel s\u2019int\u00e9resse toujours \u00e0 l\u2019ensemble de la cha\u00eene de valeur ajout\u00e9e, du producteur de c\u00e9r\u00e9ales au boulanger. Le bl\u00e9 a \u00e9t\u00e9 trait\u00e9 sans pesticides et les ingr\u00e9dients proviennent tous de la r\u00e9gion. \u00ab\u2009Bien s\u00fbr, j\u2019aimerais que ma boulangerie soit en plein milieu du champ de bl\u00e9\u2009\u00bb, ajoute Marco Berwert avec un sourire. Sa boulangerie dans ce village pittoresque avec vue sur les montagnes enneig\u00e9es de la vall\u00e9e de Sarnera n\u2019est pas une mauvaise alternative.<br>Une cha\u00eene de valeur ajout\u00e9e durable a son prix. \u00ab\u2009Cela en vaut la peine\u2009\u00bb, dit-il, m\u00eame si tous les clients ne veulent pas payer un prix l\u00e9g\u00e8rement plus \u00e9lev\u00e9. Il faut juste leur parler, selon lui.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-on-s-en-sort-bien-par-rapport-a-d-autres\">\u00ab\u2009On s\u2019en sort bien par rapport \u00e0 d\u2019autres\u2009\u00bb<\/h2>\n\n\n\n<p>La pression de l\u2019industrie\u2009: un sujet qui touche \u00e9galement Action de Car\u00eame et Pain pour le prochain dans leur travail dans les pays du Sud. Les accords de libre-\u00e9change favorisent les semences industrielles. Des lois sur les semences interdisent de plus en plus aux petits paysans de commercialiser, d\u2019\u00e9changer ou de multiplier leurs vari\u00e9t\u00e9s de semences traditionnelles. Ils doivent acheter les semences des multinationales et beaucoup d\u2019entre eux s\u2019endettent. \u00ab\u2009Par rapport \u00e0 d\u2019autres pays, nous nous en sortons encore tr\u00e8s bien en Suisse\u2009\u00bb, souligne Marco Berwert.<br>L\u2019action de solidarit\u00e9 men\u00e9e par les organisations de d\u00e9veloppement depuis 2008 est pour lui une cause importante. Cinquante centimes pour chaque pain vendu profitent \u00e0 des familles paysannes d\u2019Afrique, d\u2019Asie et d\u2019Am\u00e9rique latine, gr\u00e2ce \u00e0 toutes les boulangeries-p\u00e2tisseries concern\u00e9es, cela repr\u00e9sente 40\u2009000\u202ffrancs par an. Pendant la campagne, le boulanger propose le pain \u00ab\u2009Schwander\u2009\u00bb sous forme de pain \u00e0 partager en trois morceaux. \u00ab\u2009De cette fa\u00e7on, il peut \u00eatre facilement s\u00e9par\u00e9 et partag\u00e9 avec les autres dans un esprit de solidarit\u00e9\u2009\u00bb, explique Marco Berwert en \u00e9poussetant joyeusement la farine de ses mains.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-inscriptions-ouvertes\">Inscriptions ouvertes<\/h2>\n\n\n\n<p>L\u2019action \u00ab\u2009Pain du partage\u2009\u00bb a lieu 26\u202ff\u00e9vrier au 12\u202favril.
