Les petits pains et les croissants sont de plus en plus populaires.<\/strong><\/p>\n\n\n\n<p>Pour la troisi\u00e8me fois et \u00e0 la demande de l\u2019Association Pain suisse, l\u2019institut Link a interrog\u00e9 les consommateurs sur leur comportement de consommation et d\u2019achat en mati\u00e8re de pain. 1036 personnes ont particip\u00e9 \u00e0 cette enqu\u00eate-panel men\u00e9e en automne 2019.<\/p>\n\n\n\n<p>Qualit\u00e9, fra\u00eecheur, vari\u00e9t\u00e9 et croustillant: telles sont les qualit\u00e9s que les consommateurs suisses associent au pain suisse. 79% des personnes interrog\u00e9es appr\u00e9cient le pain suisse pour son bon go\u00fbt et presque trois quarts d\u2019entre elles pr\u00e9f\u00e8rent acheter un pain suisse plut\u00f4t qu\u2019un pain \u00e9tranger.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-origine-manque-de-transparence\">Origine : manque de transparence<\/h2>\n\n\n\n<p>Les personnes interrog\u00e9es ont en outre d\u00e9clar\u00e9 consommer du pain suisse \u00e0 90%. L\u2019origine du pain et des mati\u00e8res premi\u00e8res transform\u00e9es jouent pour elles un r\u00f4le majeur. Que le pain soit consomm\u00e9 \u00e0 la maison ou au restaurant, des valeurs telles que la r\u00e9gionalit\u00e9 gagnent en importance, \u00e9crit Pain suisse dans son communiqu\u00e9. D\u2019ailleurs, on observe ici une divergence notable entre les chiffres du march\u00e9 et la propre estimation des consommateurs. L\u2019\u00e9volution des chiffres des importations indique une augmentation de la part des pains et produits de boulangerie d\u2019origine \u00e9trang\u00e8re. Ici, l\u2019Association Pain suisse a identifi\u00e9 un potentiel d\u2019am\u00e9lioration et exige une indication d\u2019origine claire sur le point de vente ou dans les restaurants. \u00ab Ces mesures permettent aux consommateurs d\u2019acheter consciemment du pain et des produits de boulangerie locaux. \u00bb<\/p>\n\n\n\n<p>En Suisse, le pain est toujours particuli\u00e8rement appr\u00e9ci\u00e9, maintient l\u2019association. 98% des personnes interrog\u00e9es ont d\u00e9clar\u00e9 qu\u2019elles en consommaient. Les vari\u00e9t\u00e9s de pain les plus populaires sont le pain classique, la tresse, les croissants et les petits pains. Dans l\u2019ensemble, les personnes interrog\u00e9es ont toutefois indiqu\u00e9 avoir tendance \u00e0 consommer moins de pain et produits de boulangerie. Cette estimation co\u00efncide avec l\u2019\u00e9tude de march\u00e9 de l\u2019Office f\u00e9d\u00e9ral de l\u2019agriculture (OFAG) men\u00e9e entre juillet 2018 et juin 2019: selon cette derni\u00e8re, le volume de pain et produits de boulangerie vendus a diminu\u00e9 de 1,4%.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-habitudes-de-consommation-modifiees\">Habitudes de consommation modifi\u00e9es<\/h2>\n\n\n\n<p>Le croissant et le sandwich sont deux types de pain de plus en plus appr\u00e9ci\u00e9s par les consommateurs, selon l\u2019enqu\u00eate-panel. Cela s\u2019explique entre autres par l\u2019\u00e9volution des habitudes alimentaires: les gens mangent de plus en plus en dehors de la maison, que ce soit \u00e0 l\u2019heure du d\u00e9jeuner ou de la pause de midi. L\u2019\u00e9tude de march\u00e9 de l\u2019OFAG confirme cette estimation: alors que la demande est en baisse pour les gros pains, la cat\u00e9gorie des petits pains et des croissants jouit d\u2019une hausse de pr\u00e8s de 5%. Le prix au kilo de cette cat\u00e9gorie \u00e9tant plus \u00e9lev\u00e9, cela a conduit, en termes de valeur, \u00e0 une croissance du march\u00e9 du pain et des produits de boulangerie de 1,2%.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-le-pain-en-tant-que-source-importante-de-glucides-complexes\">Le pain en tant que source importante de glucides complexes<\/h2>\n\n\n\n<p>Mais le pain joue \u00e9galement un r\u00f4le important pour la sant\u00e9 et le bien-\u00eatre des consommateurs et consommatrices. Ceux-ci le consid\u00e8rent comme un aliment de base et comme une source de glucides complexes. Selon les enqu\u00eates de l\u2019Office f\u00e9d\u00e9ral de la s\u00e9curit\u00e9 alimentaire et des affaires v\u00e9t\u00e9rinaires OSAV, la consommation de f\u00e9culents au sein de la population suisse est encore l\u00e9g\u00e8rement inf\u00e9rieure \u00e0 la quantit\u00e9 recommand\u00e9e de 3 portions par jour.
